Just Cabbage Pie (Princess Pizza Maker)

Ingredients

Dough (for 2 pies):
wheat flour (preferably 1c) 600g
water and whey (kefir) 50/50 420-440g
dry yeast 8g
sugar 1 tbsp. l.
salt 1 tsp

filling (for 1 pie):
fresh cabbage 700g
bulb 1 PC
eggs 2 pcs
flour 2 tbsp. l.
sour cream 2 tbsp. l.
cheese 150g
salt, seasonings

Cooking method

  • Knead the dough in advance, I do it in HP on the "Dough" program. Divide the finished fermented dough into 2 parts and put each in its own plastic bag, abundantly oiled from the inside. Put the bags in the refrigerator for 24-48 hours. Can be used after 3 days. The next day, take 1 bag, dump the dough into a PP and simply distribute the dough over the entire lower part with your hands and form the sides. It is very quick and easy, because the dough is soft and pliable, cold and oiled in bags, it does not stick to your hands. Close the PCB, turn it on for 10-15 seconds, turn it off and put it in the closed position for 30-40 minutes. Chop cabbage, onion, garlic (optional) finely chop, sprinkle with salt, spices, herbs (optional) and mix and cook in the microwave for 15 minutes at full power under the lid. Take it out and cool slightly. Beat eggs with sour cream and flour with a fork until smooth. Pour the cabbage with this filling, mix and put on the dough. Sprinkle with grated cheese on top. Bake for 18 minutes from a cold state, turn off and leave unopened for another 10 minutes. The dough is porous and light, and the cabbage is juicy and aromatic. The pie is very satisfying, albeit simple.

Note

I prefer not premium flour, but 1-grade and spelled flour, so I usually make the dough from 100g spelled flour, 470g 1-grade flour and 30g fiber.
