Ingredients

Dough:
Wheat flour, premium 100 g
Dry yeast (Saf-moment) 1.5 g (1/3 h. L.)
Water (45C) 100 g
Dough:
Dough all
Water (45C) 80 g
Wheat flour, premium 200 g
Corn starch 6 g
Salt 5 g
Sugar 10 g
Molasses or liquid honey 23 g
Vegetable oil 15 g
Filling (250 g total):
Apples 2 pcs.
Sugar 2st. l.
Starch 1 st. l.
Freshly brewed sweet tea for lubrication

Cooking method

  • For dough, mix all the ingredients and leave for 3 hours at 30C.
  • For the dough, add all the ingredients to the dough and knead into a soft dough. Kneading with Thermomix, Spikelet mode. 7 minutes.
  • Fold the dough in an envelope, grease with oil on all sides, put in a container and leave for 30 minutes at 30C. Then knead. fold again in an envelope, return to the container and leave for another 30 minutes. Then repeat the folding procedure and leave the dough for 60 minutes. In general, the result is 2 hours of fermentation with two strokes (after 30 and 60 minutes from the beginning of fermentation).
  • At this time, prepare the filling. Peel the apples. cut into small cubes. cover with sugar and put in the microwave for 4 minutes. I don't have a microwave, so I just put it out on the stove. Cool the filling, drain off excess liquid, sprinkle with starch, mix.
  • Knead the matched dough. Divide into 12 pieces of 44 g, round each piece and leave for 5 minutes.
  • Then roll each ball with a rolling pin. Put 20 g of filling in the middle, pinch with a "boat" and put on a baking sheet covered with paper with the seam up.
  • Cover, leave for 45 minutes at 30C.
  • Brush with tea before baking.
  • Bake in an oven preheated to 230C for about 10-15 minutes.
