Swabian sour tripe (Schwabische saure kutteln)

Ingredients

beef tripe (already boiled) 500 g
butter / ghee 2 tbsp (for frying)
onion 1-2pcs
wheat flour 2 tbsp
bouillon 350 ml
dry white / red wine 100 ml (I added half)
Bay leaf a couple
juniper berries 6-8pcs
tomato paste (I have my own tomato juice) 3 tbsp
salt, pepper, vinegar taste

Cooking method

  • The Sour Tripe dish consists of washed and peeled cattle scars, very popular in Swabia, especially in the Baden-Württemberg region, as well as in the Hohenzollern and Baden provinces. Often eaten with bread or fried potatoes. The dish used to be considered the food of the poor, as it was very economical, because the tripe is sold much cheaper than the rest of the meat. A sour taste is achieved by adding vinegar or wine, or both.
  • Brown the onions in oil, add flour and cook until nutty (that is, brown too), add the broth and let it boil. Add wine, vinegar, juniper, lavrushka, tomato paste and at the end the tripe cut into strips. Let it boil and simmer over low heat, covered for about 50 minutes, until soft, at the end season with salt and pepper. It turned out very tasty and satisfying, reminiscent of goulash.

Note

Boil the scar in a pressure cooker for 1 hour, on the stove for 4-5 hours.

Rumen odor if not fresh or poorly cleaned. A well-cleaned and thoroughly washed tripe has a normal smell, and tripe dishes are popular not only in Germany, but also in France (and in Georgia and Ukraine and ...). So no BEE! Don't you like cats? You just don't know how to cook them !!!
