Cooking method

  • The origin of the name of this cookie - Dreispitze - is associated with the cocked hat. In German it translates as "dreispitz". A triangular hat is a round hat with wide brims folded so that they form three corners. It became widespread in the second half of the 17th century and was popular until the end of the 18th century, until it was replaced by a bicorne.
  • The principle of molding this cookie resembles this hat - a circle of dough is rolled out, a filling is placed in the center and the edges are bent with a cocked hat. Now let's try to repeat:
  • 1. Cooking the dough... Mix the softened butter with sugar, vanilla and yolk. Add flour and soda, slaked with vinegar. We knead the dough. It should be tight so that the cookies will not creep.
  • 2. Roll out the dough about 3 mm thick, cut out circles with a diameter of 6 cm.
  • 3. Cooking the filling... Fry the almonds. You can take unpeeled almonds - I just stayed in this form. Chop the nuts, finely chop the dried apricots (I replaced them with persimmon), add the zest and orange juice.

  • 4. Whisk the protein until fluffy, add sugar and continue to beat until smooth. Gently mix the nut mass and protein.
  • 5. Put the filling in the center on each circle. Raise the 3 edges of the circle and pinch the corners well.
  • 6. I cooked half a serving, so I had half of the whipped protein left, I squeezed it out with stars on top of the cookie. Grease the sides of the cookies with yolk, whipped with milk.
