Cooking method

  • In any kitchen in the world where they know what apples are, there is a recipe for baking with these fruits. Of course, Germany is no exception: Apfelkuchen, Apfeldatschi vom Blech - the names are different, but the essence is the same. Pies are baked in a round shape or on a baking sheet (Blech) - as you like. Only with apples or with the addition of raisins and (or) nuts - each housewife chooses the combination that her family likes best. Classic pairing: apple pie with raisins, almonds and cinnamon, whipped cream or a scoop of ice cream can be added when serving.
  • I offer you a version of the cake that I met in my Gastfamilie (host family) when I lived in Germany.
  • Grind soft butter with sugar, add eggs, then flour with baking powder, vanilla sugar or vanillin, salt, lemon zest. Quickly knead the dough and leave it in the refrigerator while we prepare the apple filling.
  • Wash the apples, peel and peel, cut into slices. Melt butter in a saucepan, add sugar and simmer apples until soft. Add cinnamon to taste. Let the apples cool. You can add raisins soaked in rum or water if the family has children.
  • Put the dough into the mold (I baked in a round shape - I laid the bottom and sides with baking paper), then apples.
  • Cooking caramel with almonds: melt butter in a frying pan, add sugar and half of almond petals. As soon as the sugar melts, distribute the mass over the apples (you need to act quickly, otherwise the caramel will set). We put the pie in an oven preheated to 180 degrees for 40-60 minutes (depending on the thickness of the dough and filling and your oven). After 20 minutes from the start of baking, sprinkle the cake with the rest of the almonds.
  • Serve the cake warm, add whipped cream or a scoop of ice cream to taste.
