South Tyrolean hunting omelet

Ingredients

chanterelles 200 g
smoked brisket 100 g
bulb 1 PC
butter
eggs 4 things
a small bunch of parsley
salt
ground black pepper

Cooking method

  • Heat the oil in a skillet and fry the finely chopped onion and brisket.
  • Add mushrooms, half of parsley and simmer for a few minutes.
  • Meanwhile, break the eggs into a bowl, stir, pepper and salt.
  • Transfer everything to a separate plate.
  • Put some more oil in the same pan and pour out the eggs.
  • Put mushrooms, onions and brisket on top.
  • Keep on the stove until the omelet is done.
  • Sprinkle the finished dish with parsley.
