Cheese porridge (dzykka)

Ingredients

Whey (low fat cream, sour cream) 300 ml.
Ossetian (homemade, Adyghe) cheese 300g.
Wheat flour 80g.
Salt taste

Cooking method

  • Pour the whey into a cast iron or heavy-bottomed saucepan. Heat to a boil, but do not boil.
  • Mash the cheese with your hands. Put in heated whey, salt and stir thoroughly so that the cheese melts and a more or less homogeneous gruel is obtained.
  • Continuously stirring, add flour and cook over low heat and stirring constantly until oil appears on the surface.
  • Remove from heat and serve immediately. When it cools, the porridge quickly thickens.
  • Very unusual taste and beautiful legend !!!! (y)

The dish is designed for

2 servings

Note

From the Book "Caucasian Home Cuisine": "Wealth, healthier, longevity, procreation - all this Ossetians call in one word" barkad ". And they wish it to friends, dear guests and, of course, newborns. When a boy is born in the family, the elders turning to the Almighty with a prayer that the barkade should accompany the future man, they lower his legs into warm cheese porridge - dzykka. This rite symbolizes the first step of a baby, and dzykka - abundance and prosperity.

Ossetians say that you need to cook cheese porridge alone, filled with patience and good thoughts. Only then will it reward you with "awakening" from the boiling mass of ghee and will be not only tasty, but also curative.

It is supposed to be eaten not with a spoon, but with a piece of bread. "

Omela, thanks for posting such a great recipe - it really is a delicious dish.
And for me, as for an Ossetian, it is especially pleasant how beautifully and sincerely you did it.

zalina74, Kara thank you girls !! I also burst into tears, from your approval. It is always problematic to post a national recipe, because cultural carriers can always do it better and tastier. Glad you liked it!!!
