Potsdamer Festtagskuchen (Potsdam Festive Cake)

Ingredients

sugar 75 g
oil 150 g
vanilla sugar 7 g
lemon zest 1/2 pc
salt

candied fruits (orange and lemon) 120 g
port wine 8 tsp
round grain rice 150 g
milk 2 st
eggs 3 pcs
sugar 150 g
vanilla sugar 7 g
rum 4 tsp
apricot jam 6-8 tsp
icing sugar for dusting

Cooking method

  • To prepare shortcrust pastry, mix soft butter with sugar, add flour and lemon zest. Remove the dough for 1 hour in the refrigerator.
  • Cut candied fruits into small pieces, stew them for several minutes with port, and leave for an hour to cool and infuse.
  • Boil rice with milk. Season with salt, add about 30 g of oil.
  • Separate the yolks from the proteins. Beat the yolks with sugar, vanilla sugar and rum until white.
  • Beat the whites separately.
  • Add cooled candied fruits, whipped yolks to rice, then gently add whites, stirring from bottom to top.
  • Roll out the dough to the size of the mold (I have a round 26 cm), make the sides 2.5 cm. The dough is very fragile!
  • Grease the cake with apricot jam, put the filling on top.
  • Bake at 180-190 0From about 40-45 minutes.
  • Cool and sprinkle with icing sugar.
