Eggplant Julienne

Ingredients

large eggplants 2 pcs
porcini mushrooms (dry) (I have boletus) 4 things
onion 2 pcs
shelled walnuts 50 g
thick sour cream 150 g
meat broth (vegetable) 1 glass
butter 3 tbsp. l
flour 3-4 tbsp. l.
sweet mustard (I have Bavarian) 2 tsp
salt, pepper, hard cheese, herbs taste

Cooking method

  • The word "julienne" is very melodic for me and it exudes tenderness and taste, festivity and at the same time simplicity ...
  • What this julienne is made of do not tell anyone - let them try to guess for themselves!
  • Soak the mushrooms in a little hot water for 1 hour, then rinse and cut into thin slices, strain the infusion.
  • Cut the eggplants into circles, salt and leave for 30 minutes. Then rinse under running water, squeeze and cut into strips.
  • Grind the nuts in a mortar. Finely chop the onion and fry until golden brown. Add eggplant and cook for another 5 minutes.
  • Now add mushrooms and nuts, cook for another 3 minutes. Sprinkle with flour, mix. We remove from the fire. Pour in the broth and 0.5 cups of mushroom infusion. Mix thoroughly so that there are no lumps.
  • Mix sour cream with mustard and pour into a saucepan. We put it on fire again, add salt and pepper. Stir until thickened, about 5 minutes.
  • Now we put the resulting mass into molds, sprinkle with grated cheese.

  • Bake until golden brown, for about 10 minutes at 180-200 * C.

even as you like it, I love eggplants sooo, and I love mushrooms, and in general I love julienne. On the weekend, guests should come, that's just the reason to bake in a large form (although I really like it in portions, but still I don't have them yet)
