Apple-tomato sauce

Ingredients

apples 2kg
tomatoes 1 kg
turnip onion 500g
Sweet pepper 300-400g
salt, sugar, ground pepper
bitter pepper 2 pcs
mustard ready 50-70g.
fresh mint 100-150g.
fresh herbs and garlic 150-200g.
apple cider vinegar or cider 50g.

Cooking method

  • This sauce has almost universal use and is quick and easy to prepare. Apples (without a core), bell peppers, onions and tomatoes, peel, wash and chop randomly, put in a saucepan, add salt and sugar (at least 2 tablespoons!), Ground pepper, hot pepper (I have 1 pepper, but he is 1 million skovels spicy), mustard. Bring to a boil and cook for 20-30 minutes, stirring occasionally. I cooked in a Steba DD1 pressure cooker on the Vegetables 0.7 (high pressure) program for 15 minutes. Add mint, other herbs (I have dill, parsley, cilantro, fennel, anise), chopped garlic and apple cider vinegar (I have cider). Beat everything with a hand blender. Transfer to prepared jars.

The dish is designed for

9-10 0.5 liter cans.

Note

The taste is sweet and sour, refreshing and delicate. For fish, meat, vegetables, pasta.

The output is about 4 liters. I close it in half-liter jars, after the bookmark I do not sterilize. I sterilize the jars before setting them in the microwave at full power, pouring 1 cm of water into each jar and covering with a lid (1 minute for each 0.5 liter).
