Sweet pepper jam

Ingredients

Sweet peppers 500g
Wine vinegar, any (I have apple cider) 120ml
Sugar brown (I have white) 250g
Salt 1/2 teaspoon
Ground black pepper 1/2 teaspoon
Rosemary 1 sprig (pinch of needles)
Bay leaf 1 PC.

Cooking method

  • I decided to place this recipe in sauces, because, after all, this is not an independent jam and not just a dish of vegetables.
  • Peel the seeds and light partitions from the pepper. Cut into strips approx. 1cm (or cubes, as you like).
  • Put in a frying pan, add sugar, salt, vinegar, rosemary and lavrushka.
  • Cook with constant stirring for 25-30 minutes. The cooking time depends on the size of the cut, on the meatiness of the pepper.
  • At the end of cooking, cool, remove the bay leaf and rosemary, add pepper. Of course, I didn’t take the rosemary needles. Arrange in small jars, close the lid. Keep refrigerated.
  • It turns out pepper in syrup with sweet and sour taste and divine aroma. And black pepper tingles pleasantly on the tongue and palate.
  • Sweet pepper jam
  • Eat with pleasure with any meat, oily fish, blue cheese. Or just coffee. Delicious!

I have long wanted to cook such confiture, but there was no occasion. Yesterday my husband was treated to four fleshy peppers, three red and one yellow. At first I wanted to make a mix, but then I decided that I liked the red jam. And quickly bungled. But you can weld from one yellow or orange, or mix all three colors. The taste is interesting, more sweet, with a slight sourness. I noticed for a long time that vinegar reveals and preserves the aroma of pepper brighter. There was a dizzying smell in the kitchen yesterday!
The only thing is, next time I'll add a little garlic or a couple of hot pepper rings to the jam - with such sweetness, I want a more pronounced pungency.
