Roll of shank, skin and tongue

Ingredients

Pork shank about 1 kg
Swine tongue one not large, but cleaned from the hyoid
Pork skin about 300 gr
Spices: allspice, black, bay leaf, coriander
Parsley root
Garlic 1 head
Gelatin 3 tablespoons
Salt

Cooking method

  • I always cook, but due to the lack of pictures, I did not upload it. And I really wanted to share.
  • Well, then let's start!
  • To begin with, soak the skins and shank well in cold filtered water, changing the water several times. We will clean and otmarafetim (you can peel or epilation if necessary). If desired, the skins can be cleaned of bacon, but I especially love it. Wash the tongue and, pouring cold water, bring to a boil. Let it boil for a few minutes, drain and place under running cold water. Then remove the rough skin.
  • Let's put everything in a slow cooker. Add salt to taste (more salty than usual), parsley root, spices. I do not harvest onions, as it gives a sour taste and quickly deteriorates. Cover with water, but only to cover. Dropping mode for 2 hours, pressure 3. After the end of the mode, the meat in the multi should cool down until it is possible to work with it.
  • Cover the table or cutting board with a baking sleeve. To remove the meat when cleaning from spices and parsley, bones. First the skin. It boiled down and instead of a whole piece, it turned out to be pieces, but then this was not noticeable. Spread it out on film. Sprinkle with more salt, some ground spices and two tablespoons of dry gelatin. Then squeeze out a few cloves of garlic. Roll of shank, skin and tongue
  • Next, lay the boiled knuckle. I didn't cut it at all. I laid it out on the skin. Also salt and sprinkle with the remaining gelatin, season with garlic. Then fit the tongue.
  • Here's what happened. Roll of shank, skin and tongue

If in a pressure cooker, then a glass and a half is enough. But the pressure is maximum. I just won't say for sure in the cartoon, I didn't use it. Better then just cook on languor.

The skin can be asked from sellers in the same market. It costs a penny. Don't take a lot, although there are awesome recipes for cooking it with garlic and spices.
The shank for this roll can be taken both back and front.
We cook it entirely of course. Therefore, ask that the lower part of the bone (especially the back shank) be chopped off a little so that it fits into the pan. Just a little, otherwise the roll will not work. If anything - write, do not hesitate. I myself like to find out everything well before cooking.
