Ingredients

Aronia 3 Kg
Boiled water 2 l
Sugar 3 Kg
Lemon acid 2 tbsp. l.
Cherry leaves OK. 300 g

Cooking method

  • So the time has come for chokeberry (chokeberry). This year I had a large harvest of chokeberry.
  • Chokeberry syrup
  • So I decided to make it for the winter, yes, and not only syrup from it. The recipe is not new, my grandmother gave it to me a long time ago.
  • For 3 kg of chokeberry twisted in a meat grinder (I did it in a blender), chokeberry will need 2 liters of boiled water. Put 300 grams of washed cherry leaves in a saucepan with chokeberry, they add flavor to the syrup.
  • Chokeberry syrup
  • Insist 24 hours. Then strain and add 3 kg of sugar to 3 kg of chokeberry, i.e. 1: 1. And 2 tablespoons of citric acid. Bring to a boil and turn off.
  • Chokeberry syrup
  • Can be bottled.
  • Chokeberry syrup
  • The syrup is ready.

Useful properties of chokeberry:
Biologically active substances of chokeberry fruits are mainly represented by substances with P-vitamin activity: flavonoids (hesperidid, rutin, quercetin), catechins, anthocyanins and leukoanthocyanins, the total amount of which reaches 2-5%. Chokeberry fruits contain up to 60% juice. They contain vitamins E, PP, C (30-167 mg%), B vitamins, a large amount of anthocyanin pigments (up to 6.4%), organic acids (0.8%), carotene (4.3-5.6 mg% ), pectin and tannins (0.48%), imparting astringency to them, sugars (4.6-10.2%) - glucose, fructose; cyclic alcohol sorbitol, nicotinic acid (0.2-0.7 mg%).

Chokeberry fruits are rich in microelements - they contain fluorine, boron, iron, copper, molybdenum, manganese, iodine compounds (up to 40 μg% for dry seedless pulp), that is, in terms of the amount of iodine, they are close to feijoa fruits, which is known as iodine concentrator.
