Ingredients

Chicken (preferably homemade) 1 piece (about 1.5 kg)
bulb onions 300gr
hot red pepper taste
paprika taste
garlic 3-4 cloves
sour cream (preferably homemade) from 100 gr to 1 liter
fresh greens bunch
salt taste
wheat flour 2-3 st. l.
water

Cooking method

  • I know this dish and have been preparing it for 20 years already as .. (yes, even from school), and I never wondered why it has such a name. And one of these days I get to the SAY7 forum and see this recipe! Sana07 from Nalchik says that this is a national Kabardian dish, a kind of visiting card and, it turns out, there are different variations of it.
  • I tell you how I cook it.
  • We clean the chicken, wash it, divide it into parts according to the joints. Salt and pepper as we like and set to stew in a cauldron, a rooster or just in a pan under the lid in its own juice, without water.

  • When the meat is almost ready, remove the lid and fry our chicken pieces a little. Add finely chopped onion and 2 cloves of garlic, flour, paprika and fry again.

  • I prefer to fry until golden brown. Then we spread the sour cream, its amount depends on your taste. The more sour cream (especially if it is homemade), the fatter the dish will be. Add water so that all the pieces are in the sauce and simmer for about 10-15 minutes.

  • Before serving, we do not regret the sauce; we must add the remaining grated garlic and herbs to it.
