Creamy Raisin Buns

Ingredients

Dough:
Water 150 g
Flour (I have a general purpose) 100 g
Dry yeast (Saf-moment) 4 g
Sugar 50 g
Dough:
Opara all
Cream 20% 150 g
Softened butter 50 g
Flour (I have a general purpose) 400 g
Vanillin 1 \ 4h. l.
Salt 1 \ 2h. l.
Sugar 100 g
Raisins 120 g
Milk for lubrication
Sugar for sprinkling

Cooking method

  • For dough, the water is heated to 40C, add sugar. flour, yeast, beat until smooth. Leave on for 30 minutes.
  • For dough, combine all ingredients (except raisins). Knead until smooth within 7 minutes. I kneaded in Thermomix, Spikelet mode.
  • Stir in the raisins at low speed (or by hand).
  • Fold the dough, place in a container, leave for 30 minutes at 30C.
  • Then knead the dough, fold it again and leave for 60-90 minutes.
  • Next, divide the dough into equal pieces (size as desired), shape into buns. put on a baking sheet. covered with paper.
  • Brush with milk, sprinkle with sugar, cover with a bag and leave for 40 minutes.
  • Brush with milk again before baking. sprinkle with sugar.
  • Bake in an oven preheated to 220C for about 15 minutes. Then reduce the temperature to 200C and bake until tender. The exact time depends on your oven. My total time was 40 minutes.
