Parmesan buns with saffron and pink pepper

Ingredients

flour 380 g
milk 230 ml
fresh yeast 8 g
butter 30 g
olive oil 1 tbsp
eggs 1 PC
light honey (molasses) 1 tsp
Parmesan 50 g
saffron 0.5 h l
pink pepper 6-8 pcs

Cooking method

  • 1. Boil the milk, add the saffron, let it brew under the lid for 5-7 minutes, then strain and cool to room temperature.
  • 2. Grind the flour with chilled butter until finely crumbled, add finely grated cheese, coarsely ground pepper and mix everything together until smooth. Grind yeast with honey, whisk the egg lightly and combine everything with milk. Add the resulting mixture to the flour and cheese and knead the dough (8-10 minutes), add olive oil at the end of the kneading. Round the finished dough (it turns out to be soft, elastic, practically not sticking to your hands) and leave to ferment for 90 minutes.
  • 3. Put the finished dough on a cutting mat slightly dusted with flour, divide into 6-8 parts and form into round buns. Leave to proof for 30 minutes.
  • 4. Bake in heated to 210C for the first 5-7 minutes, then lower the temperature to 190-180C and bring the buns to readiness (another 10-15 minutes). Before baking, make cuts and brush with milk.
