Aniseed Orange Blossom Buns

Ingredients

Dough:
flour 250 g
water (24C) 170 ml
fresh yeast 10 g
Dough:
flour 225 g
water (21C) 130 ml
salt 0.5 h l
Extraction:
flour 75 g
butter 60 g
sugar 150 g
orange blossom 2-3 h l
anise (ground) 1 tsp (no slide)
candied orange peel 75 g

Cooking method

  • 1 Dissolve the yeast in warm water, combine with flour and knead for 2-3 minutes at medium speed. Leave to ferment for 2 hours.
  • 2. Mix flour with salt. Add warm water to the matched dough and beat until smooth. Then, in several stages, introduce flour and knead the dough for 5-6 minutes, until a smooth, elastic bun is formed. Leave to ferment for 45-60 minutes (up to 2.5-3 times increase).
  • 3. Mash softened (not melted) butter with sugar, anise and orange blossom. Add the resulting mass to the dough and knead until smooth, then add the remaining flour and candied fruits. The total mixing time is 7-10 minutes. Leave the dough for the final rise for 1.5 hours (until it doubles in volume).
  • 4. Put the finished dough on a flour-dusted cutting mat, divide into pieces weighing 50-60 g. Roll the pieces into balls and let rest for five minutes. Then flatten each ball slightly with your palm and make five cuts along the edges at an equal distance from each other. Leave the buns for proofing for 20-30 minutes.
  • 5. Bake in heated to 220C for 15-20 minutes, before baking, grease the buns with yolk mixed with milk.
  • Sprinkle the finished buns with icing sugar.
