Prague night cake

Ingredients

Cakes:

Soda (do not extinguish!) 0.5 tsp with slightly. slide
Cream:
Butter 82% 1 pack (180g)
Butter 72.5% 100 g
Condensed milk 0.5 + 1/3 cans
Chocolate glaze:
Milk 6 tbsp. l.
Sugar 2/3 or 0.5 stack.
Cocoa 3 tbsp. l. with a slide
Butter 65-70 g

Cooking method

  • "Prague night"... It was under this name that this cake was baked in our family. First - grandma, then - mom, well, I've been baking it for 25 years. But only in my hands, "Prague Night" became truly chocolate!
  • "I am modest, I am modest" - it was auto-training!
  • The cake is very simple, it takes a minimum of time and effort, and gives you maximum pleasure!
  • So, let's begin: we use a glass of 250 ml and two baking dishes with a diameter of 20-21 cm.
  • First of all, let's prepare the forms by slightly greasing them with rast. oil (then we will have no time to do it!).
  • We turn on the oven at 185C and while it heats up, prepare the dough for the cakes.
  • Cakes:
  • Beat eggs and sugar until thick, whitish foam. Add there: sour cream, condensed milk, salt, cocoa, vanillin and flour *. Beat well so that there are no lumps. Now add the soda, stir quickly and quickly with a mixer (10-15 seconds) and, while the reaction is going on, immediately pour it equally into the molds. If everything is done correctly, then the dough begins to bubble right in the molds, this is a guarantee that the cakes will turn out to be loose and tender! We put it in the oven instantly. Bake for 30-33 minutes, depending on the oven. We check the readiness with a stick. The main thing is to bake, but not dry out. Let the prepared cakes cool slightly in the molds until they are warm, and then remove and cool completely.
  • Meanwhile, we prepare the cream.
  • Cream:
  • Pour butter at room temperature with condensed milk and beat. The cream turns out to be slightly liquid and is not suitable for decorating with a syringe. All!
  • I just want to add that if the cream is made only from fatty oil - 82%, then it will turn out to be very thick and taste too greasy, it will instantly harden and will not saturate the cakes at all! Do we need it? On the other hand, if you make a cream only from low-fat oil - 72.5%, then it will simply snap off with serum and turn into flakes. By the way, this is not so bad, such a cream instantly impregnates the cakes, but, unfortunately, it is almost invisible in the cut. True, this is in no way reflected in taste, unlike fat cream. But a mixture of both of these oils gives the most that neither is, in my opinion, who does not like sweets, a positive result. This cream and cakes soaks well, and is clearly visible in the cut, and does not seem greasy at all. Well, what else is needed for happiness ?!
  • Assembly:
  • Now we cut our cooled cakes, each in half. We visually divide the cream into four parts and begin to collect the cake "in a heap" cake-cream-cake-cream and so on. The top of one of the cakes rises last. It does not need to be lubricated. Add 0.5 tsp to the remaining quarter of the cream. with a slide of cocoa and stir well so that there are no lumps. Now, using a spatula for grinding, we coat the sides of the cake, leveling the surface - as if we plaster it, and then send it to the refrigerator for a short time.
  • Chocolate glaze:
  • We cook the glaze, it takes no more than 5 minutes! Faster than melting a chocolate bar in a water bath, but I'm generally silent about the taste!
  • In a small ladle, heat the milk with sugar ** until slightly hot. Add cocoa there and stir thoroughly with a whisk until smooth. Over low heat, stirring constantly, heat further.When our chocolate begins to swell and puff, remove from heat and add the plum. oil. It will melt very quickly. Beat the whole mass thoroughly with a whisk, then our glaze will be smooth, smooth and horror, how delicious! Let it cool a little, but not freeze, and pour our cake. I always have the icing, everything does not go away, but the little nephew with a bite of cake, chocolate soul, gladly sucks it off!
  • Basically, this cake should be allowed to stand for only a couple of hours, just to freeze. And he already managed to soak himself, thanks to the soft cream.
  • All! Now you can start: bite off a large piece of the whole cake, wash the chocolate from your nose and ears and wash it down with hot tea! Whisper!
  • Very quickly, almost nothing was left of this cake!

* As I already wrote, I use Makfa flour. If your flour is not so strong, then you need to take 1.5 cups of it. When placing flour in a glass, do not crush it with a spoon, otherwise more will enter than necessary. Better to just shake the glass slightly. SLIGHTLY!!!
** Prescription sugar is 2/3 cup, but I like slightly bitter chocolate, so I put 0.5 cups.
