Today I defrosted the raspberries, then twisted the rolls with my palms, cut them, pressed them with my hand, covered them with a damp cloth, standing. This is probably fermentation.
Inusya, everything is correct! This is fermentation. Only loose leaf tea should be fermented with oppression... That is, put a plate on the rolls, and on it something heavy - a stone or a jar of water. For meat grinder tea, oppression is not needed, but for rolls it is obligatory to create a dense mass.
And the girls have already explained about the freezer. It's just that it's easier to work with leaves from it later. They become softer and juicier, which is great for fermentation. And, as Vladimirovna said, the freezer allows us to make tea when it is convenient for us. In the room, the leaves can wiggle, but this will not happen with the freezer. In addition, it can store enough leaves for tea, if you collect a little.

Virgo, don't be angry
Inusya, nobody gets angry. On the contrary, we are happy to help you and we are worried about your tea. So ask as much as you like, don't be shy.

A day passed. And she is some kind of "vigorous" too, will not crumple ... Or let it lie still, until softened?
And you try to twist. If the rolls are spinning and the leaves do not break, then it is enough to dry them. If the leaves crumble when twisted, then they have not yet wilted enough.
And Lina has already told you that the leaves will not become completely soft. Cherry, anyway. And it also depends on the temperature and humidity in the house. Now it's cold and humid here. So any leaves dry for a very long time - about a day.
Inusya, one more tip. Before turning the rolls, fold the leaves in a slide and properly roll the rolling pin over them. You can then still mash them with your hands, like crumpled cabbage. This will further soften the leaves.
Inusya
Thanks girls!
Urrya, in the morning I opened a rag from a can over raspberries, and there .... soooo HONEY aroma! I'm abaldela!
Now I will dry (pralna? I do not confuse anything?)
It seems that something will come out of me sensibly)))))))))
Now I'm going to deal with the cherry
Straight mood in the morning rose like sniffing raspberries)))

Galina Iv., told everything right. Essential oils generally do not like high temperatures, so it is recommended to brew tea not with boiling water of 100 degrees, but with slightly cooled water so that they do not fly away to anywhere. And oxidation in air occurs and oils, and tanning, and all other sundries, but most often a film or from improper preparation of the raw material itself, or from improper brewing. But this film is not dirt anyway.
And I was also lucky with the area where the house is. True, when we bought, we chose for a long time, traveled a bunch of places. But the water in the well is almost mineral, and there is a sea of birds around. And we are not afraid to eat mushrooms. And the leaves for tea are not mine even once. Ecology at the level!

Inusya, everything is correct! Well done ! I am glad with you for your tea. Well, the cherry cannot fail. Do it the same way.
Just don't dry out the tea. Better then dry it in a bag than burn it in the oven! Watch your tea, mix it often.
Inusya
yeah, I see, chef!
the raspberries are being dried, I went to twist the cherries in a meat grinder. It seems to me that for the first time it will be so reliable.

Inusya, if there are no problems with twisting, then the tea will be super! Cherries are usually difficult to twist. But for this tea we do it.

Do not throw away everything that does not twist and remain inside the meat grinder, but also fold to ferment.

Veronicawhat a wonderful area you live in.
During the 15 years that we have lived here, our environment has changed a lot. There was clean air, there were few cars, like in the village. And now there are huge construction sites, there will be a helicopter cluster very close to us (they were broadcasting through all channels), I'm afraid that later there won't be such leaves.

Veronica, the same! True, I have an artesian well on the site - 52 m (there was no water closer), the water is like a "holy spring", it is already sweet (and I consecrated it). There are a million birds, there are about 30 nests in the grapes that surround the house, in the larch trees there are magpies with magpies, there are many jays and an udot with a brood lives on a pine tree. We collect mushrooms right on the site, 150-180 pcs per day (trees were planted with mycorrhizal fungi). But in the beginning, the site was just a field, which we cleared, cultivated, completely cultivated for several years, planted with trees, bushes and flowers, leaving room for a vegetable garden, a garden and greenhouses.
Inusya
Lyudochka, Ksyusha, girls, it was, it was going hard, but I have a "tank" - still one! ))) And of course I threw the leftovers into this mass, (otherwise I shouldn't have translated the products in vain?))))))))
Everything is already on the "leaven" under a damp cloth))).

Inusya, the sample can already be removed. And the rest, when it is completely dry, put it away in a closed jar. Let it insist.
And if there is still an opportunity to collect the leaves, then make a mixed tea. From everything you find This tea is delicious.

Lina, this, I understand, is labor - to clear the land for several years !!! I can't imagine how this can be done. And I am waging a merciless struggle with wheatgrass and desolation. They are indestructible like three-headed dragons!

Luda, I have a good mow of their chicks, and in spring they make an excellent soup from dream. I even have a recipe for this. But if they interfere strongly, then you can spray the leaves with a broad-spectrum herbicide in the fall (now just) and in the spring. Everything goes well.
Loksa
Linadoc, and then come back! I personally tested it. It is necessary to remove and replace the entire plot of land, and I doubt very much that it will not run away from the neighbors. Well not a hogweed! She brought out wheatgrass in a greenhouse - she mulched everything with kilometers of newspapers, and no, no, yes, I also appear with her newspapers, leaves, needles, etc., but still thriving in freedom.
Linadoc
Oksana, it took me 2 treatments (spring and autumn), and sprayed it pointwise - only on the leaves of plants of interest. All the needed ones growing nearby did not suffer. There the poison is absorbed by the leaves and transported to the root, the whole plant dies. The land and other plants are not affected. The herbicide itself decomposes after 24 hours and does not pose any danger after that.
Loksa
I'm not worried about the herbicide (autumn treatment solves this issue), in principle, I had a friend: my husband poured a solution for spraying from a watering can - 1 time, I was shocked, what did I do? - I have to spray. Diluted another portion - sprayed! In short, where he watered all summer there was no dullness, by the fall, single sprouts. And there they sprayed it, almost in more than one eye (a good, expensive fresh, wide spectrum) can be very much neglected under the bushes, under the trees. There was less of it in the greenhouse, there the victory is still mine! And I also noticed where the composition of the soil has changed, I also got bored with moaning.
Sorry to be out of topic!

Nooo! I don't let my chicks into the garden - they scatter all the mulch ... I lay it, lay it, we won't see it, we will leave the gate open, they are right there. And in the spring we went into the greenhouse (I did not fix the grate well). we were there for two hours. All the already established seedlings of tomatoes and peppers were buried. I had to replant everything. Well, NiChyo, they still harvested a rich harvest.
I, too, like Oksana, mulch everything. This is how I save myself. And some of the beds were made fenced. There practically no weeds grow.
And the soup is good! Only we won't eat as much of it as I have this dream ...

No, girls, I don't want to cheat. Why wouldn't they write there ...
Galina Iv.
All greetings! I wrote for a long time that there was no meat grinder at home (a mustache in the country) and I made strawberry leaves with a blender, then I squeezed a little more, the fermentation was so-so, dried, no aroma, I didn't want to throw it away. Now I understand what it is "tea is infused"where did the aroma come from?
lappl1

Check mark, girls. Correctly dried tea is almost odorless. Only then does it appear - after dry fermentation.
Galina Iv.
how it turns out

Yeah, that's right! Otherwise, all the tea can be thrown away ...
Galina Iv.
well then it will be that ... in six months I'll kill everyone with the smell, on the spot
Galina Iv.
a week ago there was not even a trace of such a scent as yesterday ...
lappl1
And so it will be! I was almost killed by 2-year-old Ivan tea! Was lying around in a box with mushrooms. And this year I found it. Indescribable, magical smell.
Galina Iv.
and did not absorb the smell of mushrooms?
lappl1
Nooo! I have mushrooms and tea in sealed containers. Moreover, the mushrooms were also well dried. Yes, there was only one container of tea. How I put it there is still a mystery. Usually I have tea in the mezzanine.
Galina Iv.
store hermetically, at least 2 years
We will soon put the date of manufacture, as if on wine!
Thank you, Lyudochka for FSE, FSE !!!

Better nine years. Someone also took the tea away, and found it after 9 years. Everyone had a shock after the tasting! I already wrote about this here. So Ivan tea needs to be made very, very much - for years to come.

ABOUT! And I was already thinking - to confess or not?
I thought I ruined everything ... He lay in my fermentation until the morning. In the morning I sniffed, nifiga does not smell of honey, not even any tasty, current grass.
I thought, I thought, I shoved everyone under the nose, maybe I have a wrong scent? - no one smelled. Fermented from ten in the evening until eleven in the morning (it turned out only about twelve hours of fermentation), then freaked out and set it to 100 * drying. By the way, while stirring, it was felt that the internal moisture was still present in it. But the smell was still some kind of herbal.
An hour later I turned it off, left it in the oven without opening the door and left.
At lunchtime, I returned and let's finish drying it by 50 *. And here, with a warm drying, I ALREADY FEEL THIS HONEY SMELL ALL OVER THE APARTMENT !!! And that was completely upset ...When I became dry, I turned it off. It is already felt that the humidity is gone.
This is the trick, I already began to think about how I will get out in the subject, in order to admit that nothing worked out for me ... And the main thing is patience! ...
Now it will ripen in a bag.
Who had a thread like that? Or am I just so lucky?

Who had a thread like that? Or am I just so lucky
Inusya, everything was. And that too. The herbal odor indicates that the tea is under-fermented. Odorless - about over-fermentation.
Did you write about raspberries now? Or cherry? Raspberries have a weaker smell. And one moment. You wrote that you crushed raspberries (leaf tea) by hand during fermentation. Was there oppression? For loose tea, oppression is required. Otherwise, fermentation can go very weak. But you need to make meat grinder tea without oppression - just press the mass with your hand. In addition, the layer of the mass during fermentation is important. Should be at least 5 cm. If less, then fermentation can also go very weak.
And I still recommend that you make tea from a mixture of leaves. Preferably through a meat grinder. You wrote that you have it powerful. Then you can smell it to the fullest.
And further. 12 hours of fermentation for gardeners is too much. Hours 5 - 6 - it will be good.
Omela

Exactly a lot, Inusik, I also wrote to you that no more than 6-7 hours.

Girls, so upset, but if tea smells like bath brooms, what's wrong? and fireweed and rustic? the color is dark, cool, like a store-bought one. When drying, this smell was already on the whole house, and dry too. So I'm worried, I did, I did, and most importantly, the whole family praised the whole summer that I would do such a MIRACLE !!! and now they look at me like a fool, I brewed it to my husband, said, add at least some mint, maybe he’ll kill me ... She twisted in a meat grinder, everything was strictly according to the instructions, she fermented the village until 6 o'clock, the fireweed took longer. Somewhere in the subject I read a couple of times that someone also smelled like brooms, how did you get out of the situation? The husband put forward a version that the others do not know the smell of bath brooms: girl_haha: made me laugh !!! and I even cry !!! what is wrong?
Loksa
ksyusha1997Wait a little, the aroma will appear in a month or two.
But if it's important to you, you can blend with dried citrus fruits or dried prunes, or put a stick of vanilla, or cinnamon stick in there, put cardamom whole for the smell. But it's better to wait a little ... Meditate for a month or two
Lyudochka niche I'm here on such a Temko. I like without otherworldly smells, but I like the aroma of prunes. There was a tea with such aroma on sale. Well, many people like the classic lemon tea.
lappl1
Oksan, don't ask Che - Nothing ... The main thing is to help ... So write what you think is necessary.

and if tea smells like bath brooms, what's wrong?
ksyusha1997, I repeat my answer, which I gave to the same question to Mariii back in June.
And such a smell appears in tea if there was a high temperature during fermentation - it was artificially raised by heating. I wrote in the recipe and yesterday in one comment that it is better not to heat the fermented mass. Let the fermentation take longer, but the smell will be better. I never heat up.
Another broom smell can be from too long fermentation
.

It would be nice to ask Marina herself how that tea is feeling now.
Oksana, apparently, you have not re-fermented the tea. How about heated? And at temperatures less than 15 *, the smell may also "fail". What was the fermentation temperature?
There may also be a strange odor from not sufficiently withered leaves. But there will be not a bathhouse, but a little fish.
Did you make this tea through a meat grinder or leaf tea? And the thickness of the layer during fermentation also affects. With what layer did you ferment?
ksyusha1997
twisted in a meat grinder, the granules are good, did not crumble, did not heat up anything, in the summer I did it just at a temperature of 23-24, and now in September it became cool in the house, wrapped it in a jacket as you wrote, a layer of 10 cm or more, the village fermented for 5 hours -6, and fireweed in summer 12 or more, even up to 20 hours. I was drying for two days in the country, now they almost do not dry, cool, in no hurry, the cherry did not want to dry at all. but it spun well.

layer cm 10 and more
It seems to me that there should not be a layer of more than 10 cm, as Lyudmila says, I stick to it and everything works out.
lappl1
ksyusha1997, everything that you described - well, just perfect! I have no idea what is wrong with your tea. it remains to be assumed that you have thoroughly washed the leaves after harvesting. But the girls also wash and they succeed.
Wait a month. Maybe there will be a smell?
natushka, I usually ferment in a layer of 5 - 7 cm. But the last few batches - 10 - 12 cm. I just didn't want to divide into portions and look for dishes with a larger diameter. Everything worked out great.
Inusya
Lyud, I wrote about cherries, but everything worked out with raspberries. I put oppression on raspberries. And I just crushed the twisted cherries, as taught. Well, let's see what kind of tea it will be ... Tomorrow I'm going for an apple tree and a pear.)))
Lёlka
Someone asked about rose petals. (I didn’t receive notifications, only now I saw them. I collected the faded ones and put them in the freezer in a bag. When it was full, I took a handful of petals and squeezed them tightly. I tried to separate them by petals during the drying process, although it was not very easy, because they are very thin. Petals, carried through fermentation, differ from simply dried by a rich smell
francevna
Yesterday I did a great job, made leaf tea, 1012g came out in finished form, the first time the skin on my hands darkened (I think from a pear) and I can't whiten it.
The tea turned out to be dark in color, the aroma manifested itself immediately, very pleasant, fragrant. The taste has sourness, bitterness, slightly tart, but at the same time mild in taste.

Tea - grapes, raspberries, quince, apple, pear, red currant. Did in two runs, fermentation from 6 to 8 hours, dried at 120 degrees, dried at 65 and 55 degrees.
ksyusha1997
lappl1, no, Lyudmil, I never wash the leaves, so it doesn’t roll either, it looks like I have something with the sense of smell, I don’t find anything else, although no, it also doesn’t fit, all the family also said that-brooms. I just can't understand how it is, several batches during the summer, leaves of different types, different proportions, and the result is the same! Straight some miracles! Someone jinxed my tea, I praised it so much to everyone all summer when I found out about it here !!! And everyone looked like a fool, they hadn't made tea yet .... that's the result!
francevna
Oksana, I wash all the leaves, spin them in a centrifuge, wrap them in a cloth, freeze them in a bag, then reheat them, roll them up and immediately cut them, ferment them, and dry them. Everything turns out great.
But when I was preparing the first tea, I had a cold, everything smelled like a broom. Recovered, it turned out that the tea turned out to be fragrant.
lappl1
Quote: ksyusha1997

Oksana, no, it's not about the sense of smell, especially for the whole family. Well, all the tea cannot fail. It means that the technology is broken somewhere.
I have one more question. How was the tea dried? What is it? At what temperature? Which layer? What color is your finished tea?

Alla, congratulations on another successful tea! Indeed, the work is enormous! Especially when you consider that all this is passed through the pens. And the handles are dark from the pear. There is nothing blacker than it. You can rub dark places with a lemon.
