Sour cream in a clay pot (multicooker Brand 701)

Ingredients

Cream 10% 350 ml
Dry leaven Sour cream from Lactina 1/3 pack.

Cooking method

  • Pour boiling water over a clay pot.
  • Mix cream at room temperature with 1/3 sachet of starter culture. Stir well. I immediately mixed in a pot.
  • Sour cream in a clay pot (multicooker Brand 701)
  • Place the pot in the multicooker bowl on a substrate (a handkerchief, for example) and pour water at room temperature above the middle of the pot. Cover the pot with a lid to prevent condensation from dripping into the cream.
  • Sour cream in a clay pot (multicooker Brand 701)
  • Set the mode Yoghurt 2 - SOUR CREAM, for Lactin sourdough it is 9-11 hours. I immediately put 11, because the cream was cold, not warmed up. The temperature inside the bowl is stable at 36 * C, just "as the doctor ordered."
  • After the signal, the wonderful sour cream is ready: tasty, not sour at all, thick.
  • Sour cream in a clay pot (multicooker Brand 701)
  • Bon Appetit!
  • Seeing such homemade sour cream, and even in a clay pot, my youngest child is wildly delighted. He only eats up to half of such a container at a time.

Ksyusha, class! But something doesn't work out for me, the whey separates .. though I do it in a jar, and I don't have a program Yogurt 2, regular yogurt .. can I put it on a multi-cook?
Although I did not cook from store cream, but from homemade, collected from milk ... today I will go buy the same ..
And bacteria are the same :-)

Tanya, thank you!

What cartoon are you doing? And on what sourdough?
fronya40
The sourdough is the same, but I cook in a multicooker Polaris Floris.
Ksyushk @ -Plushk @
Okay, okay. Now tell me what settings he has on the manual. How is the temperature regulated, with what interval?

Ksyusha, cool sour cream turned out And I just bought a bag of yogurt from this company yesterday for testing, I will have to try sour cream too
Ksyushk @ -Plushk @
Elena, Thank you!
Lactina starter cultures are delicious. At least we like it.
Vilapo
I think I will not be disappointed either

Silicone hot coasters are very suitable for the substrate - since there are a great many of them now. I bought a few tough ones in a cartoon and in a smaller slow one and two oval ones in a big slow one. and maybe someone else will come in handy - these silicones are good as lids - they are small, keep their shape, because they are not thin, and under the lid of the same multi or slow lid there is not always a place to cover the pot with a native lid.
Irishk @
Ksenia, again I, just recently made sour cream in the Polaris Floris multitasking on the yogurt mode - everything turned out super, just as thick as yours, just in the absence of such a leaven, I added 3 tbsp. l. ordinary sour cream, everything worked out great, (I especially liked the surprised face of the darling when I learned that the sour cream was personal preparation). I took the farm sour cream. The recipe is good and necessary

silicone hot plates are very suitable for the substrate

I have a lot of such silicone coasters, rugs, potholders, too. And I use them not only for their intended purpose.
But here I had to not lose a single degree of temperature in the bowl, so a handkerchief was put in. Silicone, for all its good thermal conductivity, can steal a degree in low-temperature conditions. We don't need this.

there is not always a place to cover the pot with a native lid

There is always an opportunity to find a suitable container. It was this pot that appeared in the 701 cartoon as a native. But I have more, with a volume of 500 ml, they will only go in 5 liters.

Irishk @, SanechkaA, thank you very much for your kind words, girls!

oh, but for those who love silicone as well as me - according to the comment from the bun-ksyushka - so that the temperature does not sneak - you can make holes in silicones - there is less silicone and there is no contact with the bottom. Well, that's me from a great love for all silicone instruments
Ksyushk @ -Plushk @
Holes are good. But sorry

who loves silicone just like me

Irina
, we are here what probably 80 percent will be. If not more. who would see my silicone collection .

Ksyusha, I don’t know .. I don’t use them ... in my opinion from 20 degrees, well, what time you want to exhibit1. Temperature step 10, but I don't remember the time ...
Ksyushk @ -Plushk @
10 degrees is bad. If I set 35 * C for sour cream, it would be good. But you can try 40 * C. Although a bit too much, of course.

Ksyusha, I am haunted by one question: why exactly 305 ml, and not 300, for example? It is fundamentally?
Today I'll try to put 37502 on the Yogurt mode for the night in Brand. There it is declared 40 degrees. To lower the degree, I'll put it in the same ceramic pot on a silicone substrate. I hope that it will work out ... Then I will report back.
How to accurately measure 1/4 of the bag? I also have Lactin.
Ksyushk @ -Plushk @
Galya, thanks, fixed.
350 ml = pot volume = cream box volume, i.e. everything came together

And you still have Brand first, without a manual one?

Oh, sorry, I forgot. Measure by eye is a diamond, otherwise not how
gala10
Ksyusha, yes, no manual. But nevertheless, I'm already in it and sous-vide got used to doing it, everything works out great! And if sour cream also turns out, then figs me all sorts of newfangled multi and pressure cookers ...
Tomorrow I will unsubscribe what happened.
Ksyushk @ -Plushk @
Yeah, come on, keep my fists @@ for you. I added there in the previous post about division
gala10
Thank you, Ksyushenka!

and say "Boil a pot!" nada?
gala10
Masha, and without these magic words nothing will work at all!
Ksyushk @ -Plushk @
Mash, nada! But press the button too.
Tumanchik
Thank you, I will bail out without fail.

Well, now I am reporting: everything worked out, there is nothing to photograph, they have already eaten. It turned out very tasty, in stores such do not sell.
I made 250 ml, 1/4 sachet of starter culture. 11 o'clock, "Yoghurt" mode in Brand 37502.
I have already been informed that it is undesirable to divide the bag, it is better to use it all at once for 1 liter. I will do so another time.
The most important thing for me is that you can do that too in Brand!
KsyushaThank you very much for the recipe!
Ksyushk @ -Plushk @
Gala, wonderful! I am very happy for the success!
And you don't doubt Brand anymore.

Divide the leaven, yes, not desirable. But when you really need it, you can
