Soft toast bread with oatmeal and whole grain flour

Ingredients

dry fast-acting yeast 1.5 tsp
wheat flour c. s or 1s. 400 g
whole wheat flour 50 g
oat flakes (instant) 30 g
sparkling mineral water 300-320 g
sugar 2 tbsp. l
salt 1.25 tsp
vegetable oil (odorless) 30 g

Cooking method

  • Mix two types of flour, oatmeal (I have Nordic with bran) and yeast (saf-moment), add salt, sugar and mineral water. Start kneading the dough. Add vegetable oil 7-8 minutes after the start of kneading.
  • The dough turns out to be of medium consistency, it does not smear along the bottom of the bucket, because of the whole grain flour and oatmeal it is sticky.
  • Fermentation for 90 minutes with one stirring in the middle of fermentation.
  • Dust the table with flour, lay out the dough, knead and knead with your hands into an oval. Let it rest for 5-10 minutes, then roll it out with a rolling pin into a rectangle about 1 cm thick (the width is equal to the length of the baking dish).
  • Roll the dough into a roll and place in a baking paper lined dish with the seam down.
  • Proofing under the foil for 60-90 minutes until the volume doubles.
  • Bake bread in an oven preheated to 230C (convection 210C) degrees with steam for the first 10 minutes, then lower the temperature to 200C (convection 180C) degrees and bring the bread to readiness. The total baking time for me was 45 minutes.
  • Transfer the finished bread to the wire rack and leave for at least one and a half, or preferably two hours.
