Flaxseed jelly ice cream

Ingredients

Water 500 ml
Flax-seed 3 tbsp. l.
Fructose 8 Art. l.
Sheet gelatin 3 pcs
Lemon zest 1 tbsp. l.
Cream 33% 500 ml
Food coloring (optional)

Cooking method

  • 1. Brew linseed jelly. Put flaxseed in a container and cover with water and add lemon zest (you can from fresh), cook for 10 minutes. Strain.

  • 5. Put the mass in an ice cream bucket and set for 35 minutes. Since the mass gradually increases - the volume increases, then to a denser consistency, you can still start the process for 20 minutes.

PySy .... but you can say a few more words about taste. I have never dealt with flaxseed jelly .... I add seeds to bread, and flaxseed oil there and in masiku porridge .... but they taste not even close to dessert .... but how about? sweet?

Thank you! Fixed - 1 tablespoon, but this zest, unfortunately, did not give any taste, next time I will take fresh and rubbed, it is more fragrant!
But flaxseed jelly does not give any taste whatsoever, it is tasteless! The whole flavor comes from cream and other additives! I take it as a basis only because this replacement for eggs and also starch, well, it is useful.

Apparently, thanks to the flax decoction, the ice cream after the freezer is not a stone (I always did it according to numerous other recipes), but semi-solid. You take it out on a stick and you can eat right away. The beauty!

In general, so far there have been two experiments.
1. Fruit ice.
Flax juice and decoction 1: 1 + sugar to taste + a little pectin instead of gelatin.
We still need to work with him, since I only had a mixture of citrus fruits from a tetrapak, and it tasted bitter because of the grapefruit, so the ice turned out with bitterness.Better to make mashed black currant or some other berry ...
2. Chocolate ice cream.
320g cream 33%
250g flax decoction
50g natural cocoa
200g sugar (but mine said it was sweet)
Mix sugar with cocoa, add a little cream and heat over the fire until the sugar dissolves. Cool down.
Combine flax broth with cocoa, beat a little. While whisking, add the remaining cream and beat a little more.
Pour the resulting mass into an ice cream maker.

150g cream 33%
300g flax decoction
150g fruit puree or juice (I had 75ml of honeysuckle juice and 75ml of apple-apricot juice packaged)
Grape sugar to taste
Whip the cream into a dense mass + flax decoction = beat + juice and sugar = beat.
Pour the resulting mass into an ice cream maker.
