Ingredients

For the strawberry filling:
Frozen strawberries 250 gr.
Alcohol (I have cognac) 30 gr.
Sugar 50-70 gr.
Corn starch (I have Garnets) 15 gr.
Agar agar 5 gr.
For ice cream:
Cream (the fatter, I have 33%) 100 g
Gelatin 5 gr.
Egg yolks S-1 2 pcs.
Condensed milk 8.5% fat 100 g
Whipped cream (I have 33%) 350 gr.
White chocolate 2 sq. by about 16 gr.
Vanillin
Sugar 1 tbsp. l.
For glaze cups:
Bitter chocolate 45 gr.
Milk chocolate 90 gr.
Cream (I have 33%) 2-3 st. l.
For the top glaze:
Bitter chocolate 2 sq. about 15 gr.
Milk chocolate 5 sq. about 40 gr.
Cream (I have 33%) 1-2 tbsp. l.

Cooking method

  • Making the strawberry filling:

The ice cream turned out to be unusually tasty, tender and creamy. No crystals. The glaze is crispy, where there is a thin layer and soft, as in "Kashtan", where the layer is thicker. The strawberry filling added sourness. But gave a little crystals. If the ice cream is allowed to melt a little, it makes an excellent soft ice cream.
