Lasagne Caprese Roll

Ingredients

Dough:
Flour 400 g
Eggs 2 pcs.
Water 40 g
Salt 1 tsp
Olive oil 1 tbsp. l.
Simple Marinara Sauce:
Tomatoes 800 g
Bulb onions 1/4 cup
Garlic 2 cloves
salt taste
freshly ground black pepper taste
Filling:
Egg white 1 large
Ricotta 3/4 cup
Mozzarella 400 g
Parmesan 1/3 cup
Freshly ground black pepper taste
Small tomatoes 3-4 pcs.
Marinara sauce 1 glass
Basil green 1/4 cup

Cooking method

  • This lasagna is perfect for cheese lovers like me and for vegetarians! Easy to prepare and original in performance! But I screwed up in a hurry, and you will not step on my rake! Roll the dough thinly and you will be happy!
  • Dough:
  • Mix all the ingredients in a bread maker on the "dough" or "dumplings" program, well, of course, you can also manually. Let's cover it so that it doesn't get weathered and let it lie down for a bit to develop gluten, and during this time we'll make a lasagna sauce.
  • Simple Marinara Sauce:
  • Wash, cut and chop the tomatoes in a blender

  • Cut the onion into small cubes,
  • Crush the cloves of garlic with the flat side of a knife and chop finely (for some reason, in this way, the garlic turns out to be less hot and with a pleasant aroma than crushing it in a garlic press into porridge.)
  • Heat olive oil in a heavy-bottomed saucepan over medium heat.
  • Fry the onion for 3 minutes, add chopped garlic and simmer until golden brown.

  • Add chopped tomatoes, season with salt and pepper to taste.

  • Bring the mixture to a boil:

  • Cook over low heat for 25-30 minutes until thickened. Unused leftover sauce can be frozen in a plastic container until the next lasagne.

  • Cheese mix:
  • Beat the egg white, add the ricotta, beat again, mix with the Parmesan and 350 g mozzarella, season with pepper.
  • Assembly and preparation for baking:
  • Roll out the dough into a thin layer, the thickness is not more than 1 mm (my mistake was that I rolled it thicker in a hurry)
  • Cut the layer into 8 strips and lay on each strip a layer of cheese mixture and 4 thin slices of tomato, sprinkle with basil (I added basil to the cheese mixture, I don’t know why, I just mixed it up, but this is not critical!) Sprinkled with thyme on top (this is my addiction - a combination of tomatoes and thyme).

  • Roll each strip, as if folding it along the width of the tomato.

  • Fill a baking dish with sauce, place our rolls seam side down in a baking dish and pour sauce ¼ of a baking dish (I filled in ½)
  • Sprinkle with 50 g mozzarella and bake for 30 minutes. in a preheated oven at 350⁰ C.
  • I have a gas oven without a thermometer, but I remember that we bake bread at 240⁰ and this is my medium heat. And it seemed to me that 350⁰C is too much ... I baked at first on the fire a little more than average, then I reduced it a little and baked until tender. Maybe I’m not right ... True, I overexposed myself a little and still managed to turn brown on one side in my broken oven, but I’m not grieving, because I love a brown cheese crust.

Some information about Caprese
Traditional tomatoes with mozzarella cheese are called caprese. This appetizer got its name from the island of Capri.Thanks to its red-white-green color, which repeats the colors of the Italian flag, caprese has become one of the national dishes of Italy. In general, capreso is slices of tomatoes, alternating with slices of mazzarella, sprinkled with green basil and poured with olive oil. Apparently this lasagna is called Caprese because of this combination of products.
