Zucchini for children

Ingredients

Zucchini (net weight) 2,5 kg
Sour apples 500 g
Small carrots 3 pcs.
Sugar 1 \ 2st.
Vegetable oil 1 \ 2st.
Salt 1 st. l.
Vinegar 9% 2st. l.
Fresh dill 1 bundle
Fresh parsley 1 bundle
Garlic (optional) 1-2 teeth

Cooking method

  • Peel the zucchini and seed, cut into cubes.
  • Core the apples and cut into cubes.
  • Grate carrots on a coarse grater.
  • Finely chop the greens (without legs).
  • Pass the garlic through a press.
  • Mix everything, add salt, sugar, vinegar. Leave on for 15 minutes.
  • Then bring to a boil, stirring occasionally. After boiling, cook, covered for 15 minutes.
  • Transfer to sterilized jars and close.
  • Turn over, wrap and leave to cool completely.
  • The recipe stuck because of the small amount of vinegar. We are doing the second year.

The dish is designed for

output 3.1L. - 3.2 liters.

In short, in the end, after processing the zucchini, it was 1867, well, of course, there were a lot of apples .. I started shouting to my husband, let's get ready to go to the market (and it's almost 17-00 by the clock) let's go for zucchini. I didn't have enough !!!!
My husband almost sent me and let's do mathematical calculations of proportions. Well, in short, for that number of zucchini (well, my husband did not want to take me to the market), we put 350 g of apples, sugar, vinegar and oil with salt on the eye already put. Garlic current is not 2-3 cloves, but as many as 5, while I was talking to my son on the phone, my husband instructed to clean 2 cloves and squeeze into the mixture. Well, he said that there was not enough garlic and thumped heartily. The rest was done according to the recipe. I didn't understand the current, why there is little liquid or should it be so? But fragrant, if only the word. As a result, I got 4 jars of 0.5 liters and two jars of 400 g. But I did not tamp it tightly, I kind of put it so airy. Now we are waiting for winter, boom to taste. Thanks for the recipe, judging by the aroma it is delicious. In general, I spun zucchini for the first time, I hope I will like it and will increase the volume next year.
