The ratio of spices as a percentage (I took a mixture of spices per 100 grams of the finished product): allspice-22%, black pepper - 33%, cardamom - 12% (I have nutmeg), sugar - 33%.

For one kg of meat is 4 grams ready-made spices. We have 1250 gr = 5 gr
Salt- for 1 kg of meat 2% or 20 gr. If you use nitrite salt, then - 10 g of nitrite + 10 g of table salt.
Paprika - 4 gr
Dry garlic - 5 g
Water - according to the rules, there is 100 g per 1 kg, but considering that we buy meat wet, reduce it to 50 g per 1 kg of meat.
