Yesterday I pickled the rabbit. Liked!
I took 3 rabbit legs
1 onion half rings
1 carrot quartered rings
3 cloves of garlic - crushed with a knife
1 tsp of Four Peppers mix
5 juniper berries - crushed in a mortar
a pinch of tarragon
salt
1/4 cup vegetable oil
2 table. tablespoons of white wine vinegar, diluted in 3/4 cup water

I kept it in the marinator for two cycles of 9 minutes each. Then she dried the meat with paper towels, rolled it in flour and fried it until golden brown in a slow cooker on Pastry. Then I added onions and carrots from the marinade and sour cream and transferred the slow cooker to Stewing for 2 hours. Real jam.

Z. s. Thanks to the one who suggested using a vacuum cleaner to suck air and create a vacuum in the marinator - it is much faster than manually and naturally has a better effect on the product in the marinator - it picks up even better and faster.

Pickled onions for garnish
I rub onions (preferably sweet varieties) on the Berner in half rings.
I pour abundantly with marinade: water, sugar, salt, vinegar, bay leaf (do not boil). The taste of this marinade is sweet and sour. The marinade should cover the onion well. I leave it in the refrigerator overnight.

Pickled cauliflower (or eggplant)

Pour boiling water over the cauliflower inflorescences, and leave for 3-4 minutes (adjust this moment yourself, I love crispy cabbage). Then drain the water, and pour the marinade of garlic, honey (sugar), vinegar, black pepper, salt, vegetable oil.
You don't need a lot of this marinade, but only to envelop the cabbage. This marinade is also sweetish with sourness. It is necessary to extract the "evil" center from the garlic and pass it through a press. I leave such cabbage to marinate for a couple of hours.

If you marinate eggplants, then before that they must be peeled, boiled (but until elastic), put under oppression. Then cut like "fingers".

Lightly salted cucumbers
Fresh cucumbers, with skin, cut with fingers, squeeze out a few cloves of garlic (to taste, and without the center), dill, salt, sugar, vinegar. Leave on for 30-40 minutes.
