They gave me a marinator for the new year, so I'm trying to use it quietly. I reread the topic, found several recipes for myself, tried it, liked it. But still there are questions, maybe experienced marinators))) will be able to answer me.
The question is on the principle of action.
I would like to understand for myself the necessity / necessity of this thing. It only speeds up the process by vacuum and overturning, or it does something else. That is, if I put the same cabbage or mushrooms in the refrigerator overnight, and do not do it in 30 minutes, will there be the same result?
And I really want to ask for the recipes.
For example, I want to marinate celery (root), I was looking for recipes in the net, but everything is with vinegar, I have a small child, I don't want to abuse vinegar, I know that you can still marinate it with lemon juice. But with lemon I can't find a recipe (((Maybe someone can tell me, the proportions are of interest.
And in general I will be very very grateful for any recipes not with vinegar, but with lemon.

I searched the Internet and decided to cook mackerel according to this recipe.

3 tbsp. l. coriander
2 tbsp. l. vinegar
2 tbsp. l sunflower oil

We mix everything into a marinator. I cut the mackerel into 2 parts. I cleaned it already on leaving the marinator.

I have a VES VMR13 marinator. There is recommended 15 minutes for fish. Now I think, when the author of the recipe wrote about 3 cycles, maybe it meant that 45 minutes? I made the fish in the evening, so I didn't open it until lunchtime. Here's what happened:

Of course, I love almost raw salmon (salted overnight in salt and sugar). But for some reason she didn't risk the mackerel. The pieces with red parts were sent back to the marinator for another 15 minutes. While eating those parts that were without blood. Despite the fact that I love everything lightly salted, it seemed quite some unsalted. But it's still very tasty. I salted my own a little, my husband was already chopping. I would also like to note that I read that someone immediately cuts, and someone marinates whole carcasses. From those who immediately cuts, there were reviews that it turns out "shaggy", in the sense of falling apart. I decided to cut off the heads, clean out the guts and cut the carcass in half. From two thick (about 600 g.) Fish, 4 pieces turned out. Of these, only one was marinated well in 15 minutes. But the onion, by the way, turned out to be salty for me. So I thought that just the salt badly soaked the fat fish. And indeed, with the second part, which had already been cut by 1 cm, it was already normal with salt. And nothing she fell apart. In the area of ​​the tail, it is generally excellent. A bit frayed around the edges, where the head was cut off. Not so much this marinator shakes her inside, as I thought. Neatly and gently turns in the flask. Next time I will cut it right away.
And another moment about spices. I did not add paprika, red pepper, mustard seeds and pink pepper, because there was none. I love coriander, but here it somehow got in the way. Even if there was a whole carcass, then it would be easy to peel it off before cutting. And when it is already cut, then 3 tbsp. l. lots of. The husband asked not to put it next time.Especially in the bow he strained. Next time I'll take 1 spoon and crush it in a mortar. I think the taste won't lose much. If you like spicy salting, then it is better to use recipes where the marinade is cooked separately, and then pour it strained to the fish.

Pour the ribs with the resulting marinade and scroll in the marinator for 3 cycles. Then you can stew or bake in the oven. I stewed in a slow cooker along with the marinade. The ribs are delicious.
