The fact is that if you cut a plant or pass it through a meat grinder, then phytoncides are released, which irritate the mucous membrane of the nose and eyes. The eyes begin to watery, and begins to pinch the nose.
But this is beneficial because horseradish phytoncides can rid you of harmful germs. As mentioned, it is a miracle cure for many ailments.
Horseradish leaves are used for pickling cucumbers and tomatoes.
At first glance, making horseradish is not difficult.
You just need to grate it, add vinegar, sugar and water.
But everyone who did it at least once cried then with burning tears. This is the nature of the product.
Therefore, if you want to preserve the inherent vigor of horseradish, do this: put the grater and the processed horseradish root in a spacious plastic bag, twist the edge of the bag hermetically and then proceed.
Another option: if you pass the horseradish root through the fine grate of the meat grinder, then put a bag on the outlet of the meat grinder and tie it so that the ground horseradish falls into the bag.
I also tried this option - I passed the root through a juicer, and then put it all together (juice and cake) - it turned out very finely and quickly, you won't have time to cry.
And if you want to get a product with a more delicate taste, for example, creamy or berry horseradish, you cannot do without a quality blender. When milled into a fine gruel, horseradish significantly loses its renowned pungency.
I offer several recipes for dishes cooked with horseradish.Horseradish sauceHorseradish - 200-300 gr. Apple. Three small onions. One tablespoon of granulated sugar, salt. Vinegar 9% - 75 gr. 4 cloves of garlic. One bell pepper (green or yellow).
Cooking method:
Grate horseradish on a fine grater. Pour in vinegar. Add sugar and salt. Peel the apple and rub finely. Bulgarian pepper, apple, crushed garlic and grated horseradish with vinegar put in a blender and grind.
Horseradish sauceProducts for horseradish sauce: 200 g horseradish, 100 g sour cream, vinegar, sugar, salt to taste.
To prepare horseradish sauce, peel horseradish and soak in water for a day, change the water from time to time. Pass the horseradish through a meat grinder. Add sour cream, salt, sugar, vinegar to horseradish. Spread the horseradish sauce over the jars, seal with lids. Store the sauce in a cool place.

350 g horseradish (root) \ 650 g sour cream \ 15 g sugar \ 15 g salt
Beet, apple and horseradish salad500 g of beets, \ 500 g of apples, \ 1-2 tbsp. l. grated horseradish, \ 1 tsp. sugar, \ juice of 1 lemon, \ salt to taste.
Preparation:
Peel the apples and beets, remove the core from the apples, grate on a coarse grater and season with a mixture of lemon juice, sugar and salt. Add horseradish before serving and mix well.
Horseradish carrotsDay snacks will need: 3-4 carrots, 2-3 horseradish roots, 80 g of vinegar, sugar, salt to taste.
Peeled carrots are rubbed on a coarse grater, mixed with grated horseradish and salt, sugar, diluted vinegar are added. Mix everything well.
Serve with boiled, fried, cold beef, cutlets.
Apple salad with horseradishYou will need: 500 g of apples, 100 g of horseradish, sour cream, 20 g of sugar, salt.
Apples are rubbed on a coarse grater, horseradish on a fine grater. Prepared products are mixed with sour cream, seasoned with sugar and salt.
Salad of boletus or porcini mushrooms with horseradish and eggsmushrooms (boletus or porcini mushrooms) - 300g \ - egg - 3 pcs. \ - horseradish - 100g \ - green onions - 50g, \ - sour cream - 50g \ - sugar, lemon juice, salt - to taste \ - greens (for decoration ).
Boil the mushrooms in salted water with spices, cool, cut into small cubes, mix with chopped onions and chopped boiled egg whites. Grind egg yolks with sour cream, add horseradish grated on a fine grater, sugar, lemon juice and season the salad. Sprinkle with chopped herbs.
Smoked fish salad with rice and horseradishfish (smoked) - 350g \ - horseradish (grated) - 100g \ - rice (boiled) - 200g \ - sour cream - 250g, \ - vinegar (3%) - 2 tbsp. l. \ - beet juice - 2 tbsp. l. \ - greens, sugar, salt - to taste.
Add horseradish, vinegar, beet juice and sugar and salt to the sour cream. In a dish put in layers the deboned and finely chopped fish and rice, pouring sauce over each layer. Decorate the salad with chopped herbs.
Beets marinated with mushrooms1 beet, 1 horseradish root, bay leaf, black peppercorns, cloves, vinegar, 3 boiled and finely chopped porcini mushrooms, 1 onion, finely chopped and stewed until soft, salt to taste, 2 tbsp. tablespoons of vegetable oil. Bake the red sweet beets in the oven, peel, cut into thin slices and put in a jar, sprinkling with grated horseradish root. Boil separately the vinegar with bay leaf, black and allspice peas and cloves. Pour the prepared beets with hot or cooled marinade (hot for 3 hours, cooled for a day). Vinegar strength to taste. Remove the finished beets from the marinade, drain the liquid, chop finely, combine with mushrooms, onions, season with oil, salt, transfer to a salad bowl. Serve with horseradish.
Gas station in Kamchatka. 4 tbsp. tablespoons of horseradish, grated on a plastic grater (better than iron), mix with 2 tsp. honey, a glass of sour cream, 2 yolks. Add juice of ½ lemon, dill, parsley. Serve with baked beets, potatoes and other vegetables.
Horseradish salad. Finely chop carrots, apples, horseradish, you can grate on a plastic grater, add a boiled chicken egg, ½ lemon juice, chopped scalded onions, any greens, season with sour cream.
Horseradish oil. Season 200 g of grated horseradish with lemon juice and honey, add 100 g of softened butter, mix. Consume like butter for sandwiches.
Seasoning from tomatoes and horseradish. Pass 1 kg of red ripe tomatoes and 200 g of horseradish through a meat grinder, add cloves of crushed garlic and salt to taste. Pour in a glass of olive oil, mix, put in a glass dish, put in the cold.
Lithuanian horseradish soup. 0.5 l of kefir, 2 hard-boiled eggs, 120 g of beets, 0.4 l of water, 100 g of fresh cucumbers, onions, horseradish, dill. Cut boiled beets into strips, cucumbers into cubes. Chop the onion, grated horseradish and dill herbs with salt, add kefir diluted with water. Boiled potatoes are good for this soup.
