Chicken in apple and mustard marinade

Ingredients

a hen 1-1.2 kg
cider 250 ml
apples 1 PC
bavarian mustard 2 h l
light honey 2 h l
olive oil 2-3 tbsp
mixture of four peppers, salt taste
cognac 2 tbsp
olive oil and butter for frying
garlic 2-3 cloves
thyme fresh 1-2 branches.

Cooking method

  • 1. For the marinade, combine cider, cognac, honey, olive oil, mustard, salt and pepper. Add the coarsely grated apple.
  • 2. Cut the chicken into portions, put in the marinade and leave to marinate for at least an hour. Then remove the pieces from the marinade and pat dry with a paper towel. Strain the remaining marinade and set aside.
  • 3. Heat olive oil and butter in a frying pan, add garlic cloves and thyme, heat for 1-2 minutes and remove from oil. Put chicken pieces in a frying pan and fry on all sides until golden brown.
  • 4. Place the fried chicken pieces in a baking dish (beforehand, you can put carrot circles on the bottom), pour in the remaining marinade, cover and put in an oven preheated to 180C for 40-60 minutes.

Note

The chicken is very soft, juicy and aromatic. For this recipe, you can take both whole chicken and chicken legs.
