Pork knuckle with sauerkraut in Bavarian style in a multicooker Bork U700

Pork shank with Bavarian sauerkraut in a multicooker Bork U700

Ingredients

Pork shank 1 PC
sauerkraut 800 g
bulb onions 1-2 pcs
carrot 1 PC
light unfiltered beer 0,5 l
soy sauce 2-3 st. l.
honey 1 tbsp. l.
garlic 4-5 teeth
spice taste
caraway 1 tbsp. l.
salt taste

Cooking method

  • Thoroughly wash and clean the shank so that there are no foreign odors, put in the multicooker bowl. Put onions, carrots, garlic and spices there. I usually put bay leaves, allspice, a couple of cloves and black peppercorns. Pour everything over with a glass of beer and salt it very well so that the knuckle is all salted in the process, it won't take more than necessary.
  • Close the MV cover and turn on Extinguishing mode 2 times (i.e. 80 min in total)
  • At the end of the program, drain the resulting broth, remove the vegetables and specials.
  • Mix soy sauce with equal amount of broth and honey. Coat the shank with the resulting sauce.
  • Fry on all sides with the lid open on the mode Oven level 2 or 3 until crusty (about 5 minutes). Both modes fry well, but I love the 3rd, because it gives a crust faster, but you need to keep an eye on it. The 2nd level is softer, you can not stand next to it.
  • Add cabbage to the bowl. Grind the cumin with your palms or sprinkle cabbage with it in a mortar. Close the lid and cook on mode Oven level 2 10 minutes... Open the lid, stir and evaporate excess moisture in the mode Oven level 2 10 minutes with the lid open.
  • Serve with cabbage and mashed potatoes.

Note

I also cooked pork ribs, but it is enough to stew them once according to the same scheme. It is not even necessary to pour the sauce, and so - delicious!

I doubt that sauerkraut can be cooked in 5-10 minutes. Or should it be extinguished separately?
And if done in the oven, how long does it take and at what temperature?

Honestly, before the multicooker, I often cooked the shank, but everything worked out for a long time, I always stewed cabbage separately in a frying pan and it was about 40 minutes - no less. And then I did not add it to the shank in the oven. Although it was possible, I think, too, 30-40 minutes before the end. Do you have pressure baked goods in your cartoon? You can try this mode.
P.S. I didn’t quite understand the question about the oven - do you mean the same recipe, but in the oven, not the multo, or only cabbage in the oven, or about the “oven” mode?

I will definitely try to cook it. Previously, this whole process took so much time ... But now it's a pleasure! Only I always thought it was Czech cuisine. Boar knee with sauerkraut, in my opinion this is a classic of Czech cuisine ... Apparently everything is similar in Europe)

The other day my husband and brother came and ordered a lot of delicious men's food. So I made the shank along with the ribs. I added them to the second stewing cycle, and the shank was frozen, but everything was perfectly cooked.
Now I am even more inclined to the ribs - still faster, and the taste is excellent !!!
