Chicken liver mousse with grapes, sherry and Roquefort cheese

Ingredients

chicken liver 400-500 g
cream 33% fat 200-250 ml + 1-2 tbsp
salt, pepper mix taste
cinnamon, nutmeg on the tip of a knife
sherry or madeira 250 -300ml
grapes 300 g
gelatin 7 g
Brown sugar 2-3 h l
cheese 200 g
pistachios 30-50 g
butter 20 g

Cooking method

  • 1. Tear off the grapes from the twigs, chop them in several places with a toothpick, put them in a closed container, pour over the wine and leave to marinate for at least 12 hours.
  • 2. Cut the chicken liver into small pieces, put in a well-heated frying pan and fry in butter for a couple of minutes. Pour in the wine in which the grapes were pickled (it takes about 100 ml for the marinade), salt, add spices and heat everything together over high heat for another 2-3 minutes. Then beat with a blender and rub through a fine sieve. Cool completely.
  • 3. Cut some of the grapes into small pieces (about a third). Beat the cream, and combine with the prepared liver in several steps. Add grapes, mix, arrange in molds and refrigerate until solidified.
  • 4. Grind the remaining cream with cheese, shape into balls and roll in pistachios.
  • 5. Pour gelatin with 50 ml of wine and let it swell. Put sugar on the bottom of the saucepan, add the remaining wine and heat until the sugar is completely dissolved, add gelatin. Warm up all together without boiling and cool to room temperature.
  • 6. Cut the remaining grapes into halves, put on top of the frozen mousse, put cheese balls in the middle and pour wine jelly. Allow to completely solidify.
