Zucchini jam with peach and lemon

Ingredients

Zucchini 1 kg
Sugar
(I usually put less,
since I don't like sugary jam)
1 kg
Lemons 2 pcs.
Peach 1 PC.

Cooking method

  • Finely chop the zucchini. Peel the lemons, remove the seeds, place in a blender, mash. Do the same with the peach (that is, in its puree). put zucchini, peach puree, lemon puree in a saucepan, cover with sugar and leave until the juice comes out (I usually leave it overnight). Put on low heat and bring to a boil (but do not boil). Repeat this procedure 3 to 6 times. It usually takes me a couple of days. After the last boil, pour the jam into sterilized jars, close the lids. All.
  • To prepare these two (1 liter each) jars of jam, it took me 1.4 kg of zucchini, 300 gr. peach puree, 300 gr. lemon puree, 1 kg. Sahara. Well, there is still a "try" left.

This jam is dearly loved in my family. I've been cooking for several years. The jam has a very pleasant peach flavor and a delicate velvety (not at all liquid) syrup. It makes no sense to put more peaches, one peach is enough for 1 kg. zucchini, if only the peaches are very small, then you can put two. The skin of the lemon must be removed without fail, if this is not done, then there will be no trace of the peach flavor of this jam.

I cooked slowly for 2 days, I didn't count 5 or 6 times. First, I cooked zucchini with sugar until the pieces are transparent and amber. I added peaches and lemons in the form of puree to the last cooking. boiled for 15-20 minutes and that's it! Either I had peaches without aroma, but I added a little more lemon zest. The taste is good sweet and sour with a complex aroma.
Unfortunately, there is no "to try". Let's try it in winter.

I cooked the jam according to this recipe, but added Zhelix for thickness (which is 2: 1), and made half of it on fructose for dad. At the end, I added natural sea buckthorn juice, it stood there since last autumn, no one wanted to eat / drink everything. It turned out very tasty, just unusually tasty!

To save your jam, you can break the whole mass with a blender in mashed potatoes, you get a delicious jam and the problem of tough orange peels will be solved.

P.S.In the absence of a blender, the fruit mass can be passed through a meat grinder.
