Ingredients

Red onion 1.3KG
Brown sugar 750g
Apple cider vinegar 500ml
Carnation 5 buds
Cumin (not used) 2 tsp
Salt 50g

Cooking method

  • This unusual onion sauce is perfect for festive cuisine. Why not use it in the New Year's menu, for example, with lamb, pig or veal!
  • So let's get started.

  • 1. Put cumin and cloves on a clean gauze napkin and tie in a knot.
  • 2. Salt onion, peeled and cut into slices, stir and leave for 1 hour.
  • 3. Mix sugar with vinegar, put a bundle with spices, bring to a boil and cook for 5 minutes over medium heat.
  • 4. Put the onion into the syrup, bring to a boil and cook for 5 minutes over medium heat. Reduce heat and cook for 2 hours, stirring occasionally.
  • The marmalade should thicken and the onion should become transparent.

Note

For storage, pour the marmalade into glass jars, seal it tightly, turn the neck down and let cool.
The marmalade tastes best when it has been brewed for several weeks. Therefore, the sauce can be prepared for the New Year's table in early December.
Store the sauce in a cool dark place.
