Soda - 1/2 tsp.
Salt - 1/2 tsp.
Dried ginger - 2 tsp
Nutmeg and cloves - 1/4 tsp each. (I added 2 teaspoons of gingerbread mixture)
Sugar - 1/2 cup (100g)
Butter - 1/2 cup (56 grams)
Vegetable oil - 1/4 cup (60 ml)
Eggs - 2 large
Molasses - 1/2 cup (120 ml)
Milk - 1/2 cup (120 ml)
Mix flour, soda, spices in a bowl.
Beat the butter and sugar in a mixer until light and fluffy. Add vegetable oil, beat, add eggs one at a time, beat well. Add molasses. Add liquid (milk) and dry ingredients, starting and ending with flour.
Bake 180 degrees for 19-21 minutes.
This makes 12 medium cupcakes.
Cream optional.
