Blueberry-yoghurt muffin

Ingredients

flour 280 g
butter 170 g
sugar 250 g
eggs (large) 3 pcs
blueberry 200 g
natural yoghurt 80-100 g
baking powder 1 tsp
baking spice mixture 0.5 h l
walnuts (for sprinkling) 50 g

Cooking method

  • 1. Mix flour with baking powder and baking spices.
  • 2. Beat the softened butter with sugar and a fluffy mass, beat eggs one by one, without stopping beating. Then, in several steps, alternately introduce flour and yogurt (start with flour). I mix with a mixer at low speed.
  • 3. Add blueberries to the finished dough (do not defrost), mix gently with a spoon. Put the dough in a dish covered with baking paper, sprinkle with nuts and place in an oven preheated to 180 degrees. Bake until skewered dry for about 40-50 minutes.

The cupcake turns out to be the most delicate, silky and aromatic. There is nothing fundamentally new in this recipe. But, in my opinion, the flavor range is very well chosen here and the yoghurt in the dough gives the finished baked goods an additional charm. In addition, the preparation is very simple and fast enough.

I will say this - the dough turns out to be thick, it does not flow off the spoon, but hangs down like a viscous wide ribbon. The yoghurt was very thick (a spoon is worth), also homemade. If we take a more liquid one, then I would reduce its amount in the dough. Maybe this will help you decide if you can do it in the cartoon.

I don’t remember how much it was before baking the dough, I just didn’t look, after the first 45 minutes the middle reached 6, after all the baking and cooling it was about 4, probably.

I just put the blueberries on my muffins on a strainer and a plate under the bottom, and it defrosts, the juice flows down.
I baked 1 portion, all according to the recipe, only there were no spices. And maybe I gave a little more yogurt than needed, added it to the eye with a spoon, overdid it. Better to weigh exactly.
