Oven cinnamon apple muffin

Ingredients

Hard sour apples 3 pcs
Cinnamon 1 tsp
Eggs 3 pcs
Lemon zest 1 lemon
Butter 20 g (+15 g for smearing)
Yogurt 1 cup
Thick sour cream 100 ml
Sugar 150 g (+ 10g for sprinkling the mold)
Flour 120 g
Almond powder 50 g
Baking powder 1 pack.

Cooking method

  • Prescribed by Catherine Moreau.
  • 1. Preheat the oven to 180 degrees. Grease the form with butter, sprinkle with sugar. While the dough is being prepared, put the mold in the refrigerator.
  • 2. Peel and cut the apples into thin slices. Place apples in a large skillet and simmer with butter for 10 minutes. Sprinkle with cinnamon on top.
  • 3. Mix yogurt and sour cream in a bowl, add sugar and eggs. Knead the mass until smooth and fluffy.
  • 4. Add flour, almond powder, baking powder and lemon zest. Put apples in dough, mix gently. Transfer to a mold and bake for 40-50 minutes. Check the readiness of the cake with a wooden toothpick. The size of the mold I used is 30cm (at the top edge) x10cmx7cm.
