Ingredients

egg yolks 6 pcs
dry white wine (Marsala, Prosecco) I have Shadone 350 ml
Strawberry 2 glasses
sugar 50 g
rum, cinnamon, biscuit biscuits (not used) optional

Cooking method

  • Sabayon is one of the most famous Italian desserts. Prepared with yolks and wine (usually Marsala and prosecco). I made it with Italian wine, but Chardonnay (Italian trattoria).
  • The authorship of the sabayon is attributed to the famous 16th century chef Bartolomeo Scappi. I invite you to join the historic dessert, which is very simple to prepare. Strawberries are among the fruits that bring us that very life-giving moisture.
  • Separate the whites from the yolks. Combine the yolks with sugar and beat them until they are foamy. Sabayon berry
  • Then gradually pour in the wine, without stopping the whipping process. Pour the resulting mixture into a heat-resistant dish, put in a water bath.
  • Cook until thick, stirring with a whisk, but not letting the water boil. Whisk thoroughly in a steam bath so that the cream does not exfoliate.
  • In total, cook for 10-15 minutes. The structure of the cream should be moderately thick so that the fruits do not sink in it, but not too dense so as not to lose their silky texture.
  • Pour warm sabayon into glasses, bowls, add berries and remove to cool for 2 hours. Sabayon berry
  • Decorate with biscuit cookies before serving. Usually sabayon is served in glasses decorated with powdered sugar.

And another piece of advice to those who will prepare this dessert, including children: In order not to pick up a substitute for wine, first cook a little Marsala, so that the alcohol evaporates, only the characteristic taste and aroma will remain, and the "degrees" will disappear.
