Eggplant confiture with ginger and chocolate

Ingredients

1 kg. eggplant
800 gr. Sahara
50 gr. fresh ginger
juice of 1 lemon
250 gr. bitter (75% cocoa) chocolate

Cooking method

  • Peel the eggplants, cut the pulp into cubes. Grate the ginger on a fine grater. Boil 300 ml. water with sugar, add eggplant and ginger, cook over low heat for about 1 hour, stirring occasionally. Pour lemon juice into hot confiture, stir and mash with a blender. Add chocolate and stir vigorously until melted. Arrange the jam in jars with sealed lids, close and sterilize for 15 minutes. This jam can be served with candied fruit toast or mature cheeses. Or you can, with a spoon Eggplant confiture with ginger and chocolate...

I didn't notice any particular difference in taste. The proportions are just slightly changed and, unlike the recipe from the magazine, the jam is not chopped with a blender, but remains in pieces.

Plum jam with tomatoes


You will need 3 kg of plums, 1 kg of tomatoes, 1 kg of sugar for each kg of jam (1: 1), 1 lemon.

Wash plums, free from pits. Place the plums in a large saucepan, add the grained tomatoes and lemon juice (I also erased the zest there)... Cook with constant stirring, then rub through a sieve (the first time I rubbed it through a sieve, the second time I just broke it with a blender)... For each kg of mixture add 1 kg. Sahara (I added 0.5 kg.), stir and cook for about 40-45 minutes, until the jam thickens.
Pour hot jam into jars.
