Mango-apricot jam for baking

Ingredients

Fresh mango (weight given already prepared and peeled) 350 gr.
Fresh apricots (weight is given for ready-made puree) 150 gr.
Orange (medium, juice and zest) 1 PC.
Lime (juice and zest) 1 PC.
Sugar 50 gr.
Pectin (Gelfix Dr. Oetker) 10 gr.

Cooking method

  • Many recipes for sweet pastries from culinary gurus contain different in content and, rather, exotic jams from fruits and berries, which are not always possible to buy in a store. I bring to your attention one of these jams, the recipe for which I spied on in LJ from maria-selyanina. True, I had to replace the marakuya (I could not find it!) With apricots, change the proportions and add lime, but I am very pleased with the result, and I am in a hurry to share it with you!
  • Peel and cut the mango into pieces.
  • Puree the peeled apricots in a blender.
  • Add lime and orange zest.
  • Place the mango, apricot zest and half of the sugar in a heavy-bottomed saucepan.
  • Heat over low heat, stirring constantly to 25 degrees. C. Pour in the pectin mixed with the remaining sugar, the main thing is that the sugar is completely dissolved.
  • Bring to a boil and pour in 50 ml. orange-lime juice.
  • Bring to a boil again, stirring constantly, cook for 2-3 minutes. Remove from heat, cool.
  • Store in a refrigerator in a sealed glass container.

The dish is designed for

500 gr.
