Eggplants according to Ust-Labinsk

Ingredients

Eggplant 1 kg
Bulgarian sweet pepper 300 gr.
Parsley and dill 100gr.
Garlic 150gr.
Vegetable oil 200gr.
Vinegar 9% 100gr.

Cooking method

  • Boil the eggplants and put under oppression for 1 hour. Then peel as desired and cut. I cut lengthwise into layers about 1 cm thick, and then across into strips.
  • Pepper seeds and cut into strips. To this add finely chopped parsley and dill, garlic, passed through a press, mix everything well.
  • Put a layer of eggplant in a bowl or saucepan, add a little salt, a layer of the prepared mixture, etc.
  • Boil the vegetable oil along with vinegar and, without cooling, pour the prepared snack with this composition.
  • After 2 hours the salad will be ready to eat (I let it stand overnight).

Note

For several years now, this appetizer has appeared on our table in the middle of summer. We really like it! Try it too!

The recipe was taken a very long time ago from the newspaper "Our Kitchen", unfortunately I don't remember the author, but he "walks" across the Internet.

We like vinegar for taste, especially since we do not particularly focus on its presence ... And we love sour. And under oppression - well, just squeeze some water ... try ...

And you can also try to cut into layers 1 cm thick, grease with vegetable oil on both sides and bake in the oven on a baking sheet until soft, the bitterness goes away by itself even with large fruits.

Today I made some changes to the recipe. I baked the eggplants whole in the oven, cooled and then everything was according to the recipe.I liked it so much, more fragrant!

Only I deviated a little from the original recipe, since there was no greenery in the house, so I put a head of onion cut in half rings and peeled the eggplants, so it turned out more tender.
