When baking some hearth sorts of rye bread (Riga, Minsk, Ukrainian, etc.), a preliminary "roasting" VTZ (dough piece) should be used. Roasting is carried out in a baking chamber at a temperature of 320-350 ° C, usually for 4-5 minutes. During this time, a thin film-crust is formed at VTZ. After that, the fried dough pieces are removed, sometimes their surface is moistened with water and, after a known exposure (maturation), they are transplanted for baking into a baking chamber with a temperature of about 230 * C.
Roasted bread has a thicker, unburnt crust and a pleasant specific taste and aroma.
L. A. Burov and others carried out a thermophysical and technological study of the process of roasting VTZ Riga bread. It has been established that roasting VTZ 800-gram loaves of Riga bread should be carried out for 5 minutes at an ambient temperature of the baking chamber of 320 * C and a hearth temperature of about 340 ° C.
The use of roasting improves not only the taste and aroma of products, but also their shape (prevents spreading) and at the same time allows to reduce the duration of baking, which should take place at an ambient temperature of the baking chamber, which decreases during the baking process from 230-240 to 180-200 ° C.

Comment:
This apparently explains the presence of a dark "burnt" crust on rye breads, including "Borodinsky", which gives it a specific smell and taste.
When baking rye bread in a bread machine, it is probably possible to give the rye bread a "burnt" crust.
After baking the bread, remove it from the bucket, quickly grease the top with water, and put it under the grill in the oven (microwave) for 4-5 minutes at a temperature of 320-350 * C.
Thus, not preliminary, but subsequent “roasting” of the finished bread will be performed.
