Dear forum users, please tell me. I have been baking in a bread maker for a long time and everything seems to be working out fine with the exception of a small nuance. The bread is dull when cut. My uncle was a baker and his bread on the cut was already shining, but what I just didn’t do, nothing comes out. And it is stored for a long time, and lush, and the taste is good, but the cut does not suit me, tell me, what's wrong?
Happy New Year to everyone

I can tell from my baked goods. Bread baked with a long dough or sourdough shines.

Was it baked in a bread maker or oven? IMHO, my bread maker has too thin and delicate walls near small bubbles, it didn't even occur to me that they could spill ... But in the oven it seems to sprinkle. But yes, there I make much longer bread6, maybe that's the point.

My bread also shines on a long dough and only from the oven.
