Ingredients

raspberry 500g.
market sour cream or good fermented sweet cream 200g.
wheat flour 25g + 150g (dough)
Sahara 75g + 1 tbsp. l. (dough)
eggs 2 pcs.
yolk 1 PC
softened butter 75g

Cooking method

  • Clafoutis (French clafoutis, from Ox. Clafir - to fill) is a French dessert that combines the features of a casserole and a pie. Fruits in a sweet liquid egg dough, similar to a pancake, are baked in casserole or quiche tins. Fruits are first placed in a greased baking dish and then poured over with dough.
  • The classic is the pitted fresh cherry clafoutis, but nowadays cherry klafoutis are more often made from canned pitted fruits. There are peach, apple and pear clafoutis and the fruit is cut into cherry-sized pieces. " (wiki)
  • Here, Gerard offers shortbread dough as a base, and in combination with sour raspberries and sweet, delicate pouring, it turns out great. Here is a piece of advice from Depardieu himself: "This pie can be made with other berries and fruits: cherries, apricots or mirabelle plums ... In general, with any juicy fruits and berries."
  • Preparation: 45 min.
  • Baking: 20 min.
  • Ingredients for 4 servings:
  • 500 g of large fresh raspberries (you can use frozen)
  • For the clafoutis test:
  • 200 g of market sour cream or good fermented sweet cream (original cream-fresh)
  • 25 g wheat flour
  • 75 g sugar
  • 2 eggs
  • For shortcrust pastry:
  • 150 g wheat flour
  • 75 g softened butter
  • 1 yolk
  • 1/2 sachet baking powder
  • 1 tbsp. l. granulated sugar
  • 1 pinch of salt
  • APPLICATION:
  • Knead the dough: mix the flour with baking powder and pour it onto a cutting board. Make a depression in the center, add granulated sugar and salt, add softened butter and yolk. Stir well, adding a little water: the dough should easily come off your hands. Roll it into a ball, wrap it in cling film and place in the refrigerator for an hour.
  • To prepare the batter: In a large bowl, combine the crème fraîche with flour, sugar and 2 eggs.
  • Preheat the oven to 210C, grease a large round shape with butter.
  • Roll out the shortcrust pastry into a thin layer and carefully lay the layer into a mold. Chop the dough well with a fork and put in the oven for 10 minutes. [
  • Cool, put raspberries on the bottom.
  • Pour the clafoutis over with the dough and place in the oven for another 10 minutes.
  • Remove the form from the oven, cool the pie and serve
  • I took the recipe on the blog from Nina NIiksya, took sour cream from the market from sweet cream, did not keep the dough in the refrigerator at all, there was no time, with the filling of the dough in my oven it was 15.10 minutes, it was not enough.

I decided today to destroy the remnants of the stocks of raspberries frozen in the summer. And I chose this recipe. I really liked it! The most delicate dessert! The only thing (but these are my shortcomings) slightly overdried the cake, and the top layer did not completely freeze. It was not possible to put it out of the mold, so we ate with spoons directly from it. But this did not spoil the mood at all!
I will definitely cook it again and then I will take a beautiful photo. There is an idea not to bake the cake in advance and put a little less sour cream. And try the traditional recipe without the crust. You can bake in small forms and put in bowls, there will be a great dessert for the holiday!
