Gourmet Snack Pie

Ingredients

For the test:
instant oatmeal 50 g
wheat flour 150 g
walnuts 20-30 g
egg 1 PC
water 100 ml
dry white wine 50 ml
olive oil 60-70 ml
baking powder 0.5 h l
salt, black pepper taste
For filling:
eggplant (medium) 1 PC
zucchini (medium) 1 PC
bulb onions 1 PC
a tomato 1 PC
chili pepper (fresh) 0.5 pcs
boiled tongue 150 g
To fill:
cream, 33% fat 200 ml
Parmesan 100 g
egg (large) 1 PC
smoked paprika 1 tsp

Cooking method

  • 1. Peel the eggplant and onion, cut into cubes and fry over moderate heat until golden brown (5-7 minutes), cool. Combine with boiled tongue cut into cubes, lightly salt and pepper.
  • 2. Cut the zucchini into 0.5 cm thick circles, remove the skin from the tomato, remove the seeds and cut into thin slices.
  • 3. Fry oatmeal and chopped walnuts in a dry frying pan until lightly golden, cool. Combine with flour, baking powder, salt and pepper. Mix water with wine, whisk the egg lightly (as for an omelet). Pour water and wine into dry ingredients, mix. Add egg and stir until smooth. Gradually pour in olive oil and stir well. Pour the finished dough into a mold covered with baking paper (sides too). The finished dough has the consistency of thick sour cream.
  • 4. Place eggplant cubes mixed with boiled tongue on the dough. Arrange on top, alternating slices of zucchini and tomato with each other.
  • 5. Mix the cream with the grated Parmesan cheese, add the slightly beaten egg, smoked paprika and stir. Pour this mixture over the cake. Sprinkle with finely chopped chili peppers on top and place in an oven preheated to 170 degrees for about an hour.

Note

The pie is light and satisfying at the same time. Best served slightly warm with a glass of light white wine.

Alyona, baked in a form with a diameter of 20 cm, and smoked paprika is the same powder as ordinary paprika, but due to the primary processing it has a smoked flavor (you can draw an analogy with prunes - there is simply dried, there is smoked).
