Almond honey cake with apricots

Ingredients

almond 220 g
butter 100 g
orange blossom honey 100 g
eggs 3 pcs
powdered sugar 75 g
flour 50 g
corn starch 25 g
baking powder 1 tsp
juice and zest of half a lime
apricots 8-10 pcs

Cooking method

  • 1 Peel and grind the almonds into very fine crumbs. Separate the whites from the yolks. Cut the apricots into quarters.
  • 2. Mix ground almonds with honey and juice of half a lime. Adding proteins one by one, beat into a fluffy creamy mass - it is more convenient and fastest to do this with an immersion blender.
  • 3. Beat softened butter with icing sugar. Then, while stopping whipping, add the yolks one by one. Combine with almonds, add flour mixed with cornstarch and baking powder. At the very end, add the zest from the half of the lime and stir quickly.
  • 4. Place the dough in a mold covered with baking paper (mold diameter 26 cm). Lay the apricot quarters on top. Bake in an oven preheated to 170 degrees for about 40 minutes. Sprinkle with icing sugar before serving.
