To say that the whole kitchen was in the marshmallow, including the curtains and the dog, is to say nothing. Then an epic with stuffing into a bag.)))
Bottom line, it worked. Delicious!! I will do more!

Good afternoon. Yesterday I made marshmallows. But since I need to see, and then cook according to a new recipe, I, of course, went to YouTube and found that recipe with less sugar. My mixer is not great, 450 W power, I made 1/2 of the recipe.
First, 10 g of gelatin was soaked in 50 ml of warm water, then dissolved in a steam bath until smooth. Then I cooked syrup from 300 grams of sugar and 75 ml of water, cooked it over low heat for 9 minutes (the syrup really didn't even reach a soft ball!). Then she poured syrup into the mixer bowl, gelatinous liquid into it, and after a couple of seconds began to beat. After soft peaks, I added a little less than 1/2 tsp of citric acid and a pinch of vanillin, without stopping to beat. After another couple of minutes, I added 4 grams. soda, the mass became much more airy, the lemon and soda reacted, beat it for a couple of minutes, the guideline for the readiness of the mass was that it departed from the walls of the bowl and wound well on the whisk (as when preparing meringue or bzk, the stickiness and state was the same white tasty masa), put it in two large pastry bags with two nozzles, put it in the refrigerator for an hour (according to the recipe, you need it for three), everything grabbed quickly, kept its shape well, after an hour in the refrigerator I pulled it out on the table. After another two hours there was a crust on top, soft inside.I asked my husband what it looked like, he said that one in one shop marshmallow, even the smell is the same. Next time I will not finish the mass a little, I will pour chocolate. Surprised that it whipped quickly. Compared to marshmallows on agar and mashed potatoes, it is different, but delicious.
