Dessert with limoncello and ricotta

Ingredients

For cheese filling
ricotta, mascarpone or almette 250 g
powdered sugar ~ 2-3 st. l.
limoncello 1.5-2 tbsp. l
lemon zest 1 tbsp. l
For soaking cookies ~ 200 gr
limoncello ~ 100 g
water ~ 100 g
For cream
cream (at least 23% fat) ~ 200 gr
powdered sugar ~ 1-2 tbsp. l
Savoyardi cookies 12 pcs
lemon custard ~ 200 gr

Cooking method

  • I suggest you try a dessert almost Tiramisu, but with Limoncello liqueur, Ricota cheese and lemon custard.
  • Combine ricotta cheese (or mascarpone or almette), icing sugar, lemon zest and 1 tbsp. l. liqueur Limoncello. Set aside.
  • In a saucepan, bring water and limoncello to a simmer. Let it simmer for 2-3 minutes, remove from heat and cool slightly.
  • Dip the cookies halfway into this warm mixture and place evenly on the bottom of the tin.
  • Next, fill out the form in the following sequence: ricotta layer, soaked biscuit layer, lemon cream layer, biscuit layer.
  • Using a mixer, beat the cream and powder together for the last top coat.
  • Refrigerate for at least four hours. Preferably at night.
  • Serve well chilled.
  • Dessert with limoncello and ricotta

I give approximate proportions, since the filling layer can be thinner or thicker. If the filling turns out to be dry, you can dilute it with cream. In my opinion, the tastiest, of course, is with mascarpone, but substitution with ricotta or even almetta is quite possible.
