Homemade cream cheese

Ingredients

Kefir 400 ml.
Ryazhenka 400 ml.
Sour cream 200 ml.
Salt 1 tsp without slide
Apple cider vinegar or lemon juice 1 tsp

Cooking method

  • Mix all products in one bowl. Set the colander over a deep bowl, line it with gauze folded in several layers and pour the resulting mixture there. We put this whole structure in the refrigerator and let it stand for a day (it was recommended in the recipe) ... although ... here individually ... Personally, I was convinced that I liked the result obtained after 1.5 days of standing more. As for me, after a day the cream cheese was still thin. I was trying to achieve exactly the store-bought consistency of curd cheese, so after 1.5 days it was just it !!!

The fat content of dairy products is at your discretion. The first time I took 1% kefir and fermented baked milk, and 10% sour cream. And this time kefir and fermented baked milk-3.2% fat, sour cream-15%. You can do without apple cider vinegar / lemon juice, but I personally liked vinegar more, the finished product contains the sourness inherent in cheeses of this type.

The amount of salt is also individual. I measured out the salt with a standard "under the knife" measuring spoon. I’m just great, my family said that it would be nice to add half a spoon, in general, do it for the first time according to the recipe, and then we will see.

And also ... I never use gauze when making homemade dairy products. Here she smells like kill me ... At least pour boiling water, at least rinse in the conditioner, everything is the same -stinks it smells ... Therefore, I use disposable paper towels, always of good quality, otherwise there are such as toilet paper, well, you can see them right away ... So with these paper towels, I line a colander, in 3-4 layers. When the cheese is ready, I carefully transfer it to the dish in which I plan to store it in the future, and the paper towels ... nope, I don’t throw them away ... I first squeeze them well, you know how many most valuable product serum is delayed ?! And I collect her darling for bread ...

By the way, yes, I completely forgot ... It is not forbidden to introduce additives into this cheese (sweet or salty, no difference), only they need to be introduced into the finished product, gently mixing after adding.

And also ... and also ... this cream cheese makes a delicious cheesecake, for the first time I foolishly zababahala double portion (I had to divide into two sieves, one did not fit), so it was enough to try and cheesecake.
