Was taken instead of a broken yogurt maker, so the main requirement was just yogurt and cottage cheese. I don't know the significant differences between Polaris and Brand, except for the size of the bowl. I can just tell you about 701, which I have been using for about 3 months.

Milk 701 fulfills perfectly. There are three sub-modes in the Yogurt mode. Yogurt itself, sour cream (not used yet), cottage cheese.

In the Yogurt sub-mode, you cannot change the temperature, but you can change the time, which by default is 6 hours. We make from dry leaven + milk. We put on the night. It turns itself off, by the time I get up, it already cools down a little. From the first sourdough I put aside the floor of the jar for the re-sourdough (I make 2 tablespoons for 2 liters of milk). The bowl is 3 liters, but the working volume is 2 liters. Our yoghurt goes very well, about 0.6 liters per day (in the morning everyone has a glass of yogurt with fiber, some in the evening). Yogurt is also very thick, so it replaces sour cream for cooking (scrambled eggs, cottage cheese casserole, in borscht, sauces from it (yogurt + squeeze garlic + herbs), etc.). Therefore, almost every night I re-leaven from the leaven that was deferred from the first leaven. Minimum 4 times, maximum 5 times. I always keep within the regime so that the yogurt set aside for over-culture does not stand for more than 5-5.5 days. Then again from a new bag of dry starter culture.

I haven't tried Sour Cream yet, but I'll do it for NG. There's a secret in milk + cream.

The cottage cheese sub-regime is also very active here. And also from dry starter cultures. I like it more than in a yogurt maker. Since in a yogurt maker it was necessary to make a water bath with your hands - a saucepan in a saucepan, watch out, etc. degrees, the second half an hour at 70 degrees. That is, it replaces a water bath.
